2 (5 oz.) can(s) light tuna in water, drained well
1 medium zucchini, shredded
1 egg, lightly beaten
1/2 c italian bread crumbs
2 Tbsp shredded mozzarella cheese
2 Tbsp grated parmesan cheese
2 Tbsp mayonnaise
1/2 tsp oregano
1/2 tsp basil
1/4 tsp onion powder
1/2 tsp garlic powder
to taste salt & pepper
2-3 Tbsp olive oil

Steps:

  • 1. Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.
  • 2. Place all ingredients except oil into a mixing bowl. Stir to blend very well.
  • 3. Form the mixture into patties. Set aside.
  • 4. Heat olive oil in a large skillet over medium.
  • 5. Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.

1/4 cup Bisquick
1/3 cup red onion, chopped
1/2 cup Italian breadcrumbs
2 tablespoons flat-leaf Italian parsley, chopped

2 teaspoons butter
2 teaspoons extra virgin olive oil
