1 extra large zucchini, quartered lengthwise, seeds scooped out
salt and ground black pepper to taste
2 pounds ground beef
1 onion, chopped
5 cloves garlic, minced

1 (6 ounce) can tomato paste
1 cup water
¼ cup chopped fresh basil, or to taste

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

½ cup milk
1 small onion, chopped

1 ½ cups rolled oats

½ teaspoon garlic powder
½ teaspoon salt
2 cups spaghetti sauce
5 dashes hot pepper sauce
1 tablespoon Worcestershire sauce

1 medium yellow onion, minced
1 red bell pepper, minced
Pinch crushed red pepper, optional
2 pounds ground beef (I use 80/20)
1 cup grated Parmesan
3/4 cup breadcrumbs
1/4 cup minced fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
16 fresh basil leaves, chopped
2 large eggs, lightly beaten
1 cup marinara sauce
6 tablespoons unsalted butter, at room temperature
6 soft sub rolls, split
Garlic salt, as needed
1 cup marinara sauce
1 pound sliced mozzarella

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat the olive oil in a medium skillet over medium heat. Add the garlic, onion, bell pepper and crushed red pepper if using and saute until the vegetables are tender, about 5 minutes. Set aside to cool.
  • In a large bowl, combine the beef, Parmesan, breadcrumbs, parsley, Worcestershire sauce, garlic salt, kosher salt, pepper, basil, eggs, 1/2 cup of the marinara and the cooled vegetables.   • For the sandwiches: Butter the rolls and then sprinkle with garlic salt. Transfer to a baking sheet and bake until light golden and toasted, about 5 minutes.
  • Add a slice of meatloaf to each toasted roll and top with some of the marinara and 3 slices mozzarella. Return to the oven and bake until the cheese is melted, 8 to 10 minutes.

4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced

4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.

  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

I came up with this recipe myself. I love meatloaf but I can't eat ground beef very well so I tried ground turkey and Italian sausage together and really liked it. This is not a spicy meatloaf, but it is tasty. You can add more spices if you want or use hot Italian sausage. Making the meat mixture an hour or so ahead of time allows the flavors to blend and makes the meatloaf taste better. It also allows the wet ingredients to be absorbed by the meat and oatmeal. This will make really good sandwiches the next day. I didn't put a sauce on my meatloaf. Therefore, there is no topping suggestion included. This is real comfort food. Prep time does not include refrigeration time. Refrigeration time is optional. Recipe edited on February 12 2006.
