Combine remaining 1/4 cup of bread crumbs and 1/4 cup of Parmesan in a small mixing bowl. Divide the bread crumb mixture evenly among the tops of the mushrooms. Bake until golden brown on top and the mushrooms are tender, about 15 to 18 minutes. Remove from oven and let cool slightly. Tips:

  • Select large portobello mushrooms: Choose portobello mushrooms that are large and have a wide, flat cap. This will provide ample space for the stuffing and ensure that the mushrooms hold their shape during cooking.
  • Clean the mushrooms thoroughly: Gently wipe the portobello mushrooms with a damp cloth or paper towel to remove any dirt or debris. Remove the stems by twisting them off with your hands or using a spoon.
  • Marinate the mushrooms: Marinating the portobello mushrooms in a mixture of olive oil, balsamic vinegar, herbs, and spices enhances their flavor and tenderness. Allow the mushrooms to marinate for at least 30 minutes, or up to overnight.
  • Stuff the mushrooms generously: Don't be shy with the stuffing! Generously fill the portobello mushroom caps with the stuffing mixture, ensuring that it is evenly distributed. This will ensure that each bite is packed with flavor and texture.
  • Cook the mushrooms until tender: Bake the stuffed portobello mushrooms in a preheated oven until they are tender and the stuffing is cooked through. The cooking time may vary depending on the size of the mushrooms and the stuffing ingredients, so keep an eye on them to prevent overcooking.
