The combination of spinach, artichokes and cream cheese is always a crowd pleaser. Add basil and a roasted red pepper sauce, and you have perfection on a fork! To save time, the stuffed beef filling can be made ahead and chilled. You can also make the sauce ahead and reheat it when you are ready to serve. -Noelle Myers, Grand Forks, North Dakota

Yield 6 servings.

Number Of Ingredients 10

1 beef top sirloin steak (2 pounds)
2 jars (8 ounces each) roasted sweet red peppers, drained and chopped, divided

1 carton (8 ounces) spreadable chive and onion cream cheese
1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained and finely chopped

Place seam side down in a greased 13x9-in. baking dish; sprinkle with salt and pepper., Bake until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 30-35 minutes. , Meanwhile, place pasta sauce and remaining roasted peppers in a blender; cover and process until smooth. Tips:

  • Choose the right cut of beef. Look for a flank steak or skirt steak that is about 1/2 inch thick. These cuts are thin enough to roll up easily, but they are also flavorful and juicy.
  • Pound the beef until it is thin. This will help to ensure that the rolls cook evenly. You can use a meat mallet or a rolling pin to pound the beef.
  • Season the beef liberally. Use a combination of salt, pepper, garlic powder, and onion powder. You can also add other herbs and spices to taste.
  • Don't overfill the rolls. If you put too much filling in the rolls, they will be difficult to roll up and they may fall apart during cooking.
  • Cook the rolls on a medium-high heat. This will help to sear the outside of the rolls and keep the inside juicy.
  • Baste the rolls with the cooking juices. This will help to keep them moist and flavorful.
  • Let the rolls rest before serving. This will allow the juices to redistribute throughout the rolls.

Conclusion:

Italian stuffed beef rolls are a delicious and hearty dish that is perfect for a special occasion. They are easy to make and can be tailored to your own taste. With a little planning, you can have a delicious and impressive meal on the table in no time.
