HOMEMADE ITALIAN TURKEY SAUSAGE
Pens Joyce Haworth from Des Plaines, Illinois, "When the stores in my area stopped carrying our favorite turkey sausage, I was desperate! I went to the library for some books on sausage-making...and was surprised to learn how easy it is! We use this sweet spicy sausage on pizza, in spaghetti sauce, casseroles and breakfast patties."

Tips:
- Use a variety of ground meats. This recipe calls for a combination of ground turkey and Italian sausage, but you can use any ground meat you like. Some other good options include ground beef, lamb, pork, or chicken.
- Don't overmix the meat. Overmixing the meat will make the burgers tough. Just mix the ingredients until they are combined.
- Cook the burgers over medium heat. This will help to prevent them from drying out.
- Make sure the burgers are cooked all the way through. The safe internal temperature for ground turkey is 165 degrees Fahrenheit.
- Serve the burgers on your favorite bun. Some good options include hamburger buns, potato buns, or even lettuce wraps.
