5 cups beef broth
½ cup water
½ cup red wine

  • In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  • Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine

This is a dish I invented to try and get my picky-eater son to eat something other than macaroni and cheese, hotdogs, or hamburgers! He always thought regular marinara sauce was too "strong tasting"....I think it is just too acidic for him. However, he loves cheese and loves italian sausage. Much to my surprise, I have found that I love this dish as well. I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream. If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey. The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. I think those would be nice with the dish.

1 lb Italian sausage, Casings Removed
1/2 small onion, finely diced
1 (28 ounce) can crushed tomatoes or 1 (28 ounce) can tomato puree

1/4 cup red wine (don't use cooking wine, use a tastey red wine you would drink!)
1 teaspoon sugar
1 teaspoon dried oregano leaves, crushed
1 teaspoon basil
1 1/2 teaspoons parsley flakes
1/8 teaspoon dried rosemary (optional)
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup heavy cream
1/8 teaspoon dried marjoram
1/4 cup water, depending on your simmering time
1/4 cup parmesan cheese, shredded
1/4 cup romano cheese, shredded

Steps:

  • In a large, heavy stockpot or dutch oven, brown the Italian sausage, breaking it up to the consistency you desire.
  • Add the onions and cook until they are soft. Drain the grease from the pot.
  • Add garlic, crushed tomatoes, tomato paste, water, basil, oregano, parsley, marjoram, sugar, salt, pepper, and rosemary (if desired). When adding the water, consider how long you will be simmering. The water helps to merge the flavors, but you do not want the sauce to be too thin. If you will be simmering your sauce for a shorter amount of time, add less water. Stir all these ingredients together and bring to a slow boil.
  • Stir in red wine.
  • Simmer on low for at least an hour. Then add the cheeses and the heavy cream. Stir well, until the cream and cheeses are well blended into the sauce. Stir occasionally while the tortellini is cooking to prevent the sauce from sticking and to prevent the cream from scorching.
  • Bring water to a boil in another pot for the tortellini. Add a little olive oil to prevent the tortellini from sticking. Once the water comes to a boil, add the tortellini. Cook according to the package directions.
  • I usually reserve some of the sauce for spaghetti for another day -- I add some sauteed mushrooms then. I try to ration the sauce to the amount of tortellini. If you like lots of sauce, use all the sauce. But if not, save some for another pasta dish. It freezes well. At my house, it never lasts long enough to freeze!

26 ounces tortellini, thawed
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375°F
  • In a skillet, over medium heat, brown meat till cooked. Drain grease & set aside.
  • In same skillet, saute onion & zucchini about 3 minute
  • Stir in tomatoes & oregano; return meat into saucepan & bring to a boil.
  • Pour over uncooked tortellini into large casserole (with cover). Sprinkle with 1/2 of the cheese.
  • Bake, covered, for 10 minute
  • Stir casserole, sprinkle remaining cheese & bake 10 min longer or until pasta is tender.

1 lb sweet Italian sausage, casings removed
1 lb mild Italian sausage, casings removed
1 cup onion, chopped
2 garlic cloves, minced
5 cups beef broth or 5 cups stock
1/3 cup water
1/2 cup red wine (I like cabernet or sauvignon )
2 (14 1/2 ounce) cans diced tomatoes
1 cup carrot, thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 (8 ounce) tomato sauce
2 zucchini, chopped
2 yellow squash
8 ounces cheese tortellini
2 green bell peppers, chopped

Steps:

  • Place the sausage in a large pot over medium high heat brown the sausage. Add the onions, garlic, peppers and carrots. When those ingredients have softened, add the beef broth, water.
  • Next add the beef stock, water, wine, tomatoes, basil, oregano and tomato sauce. Bring to a boil, reduce heat to low and simmer for 30 minutes, skimming any fat that may surface.
  • Add the zucchini, yellow squash, and tortellini, Simmer for 10 minutes, or until tortellini is fully cooked.

If you use full fat italian sausage, you will need to drain the fat before adding the liquid ingredients or skim the fat from the soup as it simmers. This recipe is very suitable for Weight Watchers if you use very lean sausage and go easy on the tortellini.

1 lb lean Italian sausage, casings removed
1 large onion, diced
2 garlic cloves, crushed
3/4 cup red wine
3 cups stock (I use beef)
2 carrots, peeled and finely diced
2 zucchini, finely diced
10 fresh basil leaves, finely chopped
2 cups canned chopped tomatoes
10 ounces fresh tortellini (I prefer four cheese for this dish)
freshly shaved parmesan cheese (optional topping)

Steps:

  • In a large saucepan, cook the sausage for 5 minutes over a medium heat, mashing it up with a spatula (if using very lean sausage you may need to add a little cooking spray).
  • Add the onion and garlic and continue to cook for a further 3 minutes.
  • Add the red wine and cook for a further 2 minutes.
  • Add the beef stock, carrots, zucchini, basil and chopped tomatoes. Reduce the heat and simmer, loosely covered, for 30 minutes.
  • Add the tortellini and cook for a further 2-5 minutes, until the tortellini is cooked but not overdone.
  • Remove from the heat and serve, topped with freshly shaved parmesan cheese if desired.

1 lb. Italian Sausage, rolled into 1/4 teaspoon size balls
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 red bell peppers, diced
1 bay leaf
1/8 teaspoon red pepper flakes
8 cups vegetable or chicken broth
2 (15 ounce) cans diced tomatoes
1 1/2 cups chopped kale
2 cups cheese tortellini (fresh or frozen)
1/4 cup chopped fresh basil
Salt and black pepper, to taste

Steps:

  • 1. In a large skillet, brown the mini sausage balls until cooked through. This will take about 5-7 minutes. Drain off the grease and place the sausage balls on a plate lined with paper towels. 2. In a large pot, heat the olive oil over medium high heat. Add the onion and cook until tender, 3-4 minutes. Stir in the garlic and cook for 2 minutes. Stir in the red peppers, bay leaf, and red pepper flakes. Cook until peppers are soft, about 3 minutes. 3. Stir in the broth, tomatoes, and kale. Add the cheese tortellini and cook until tortellini is tender, 7-8 minutes. Stir in the fresh basil and season with salt and pepper, to taste. Stir in the mini sausage balls and heat until warm. Remove the bay leaf and serve. Note-you can make this soup vegetarian by using vegetable broth and omitting the sausage. Josh always ladles up my bowl first, and then adds the sausage. This soup recipe is very adaptable!
