This is a "lazy" supper. Can be prepared early in the morning and refrigerated till time to bake. Great flavor combo. Using hot sausage adds a Bam!

4 large potatoes, scrubbed and cut in wedges
1 lb sweet Italian sausage links or 1 lb hot Italian sausage
1 (3 1/2 lb) chicken, cut into pieces
2 garlic cloves
1/2 teaspoon salt
fresh black pepper
1 (15 ounce) can diced tomatoes
1 tablespoon olive oil
3 basil leaves

Steps:

  • Preheat oven 350°.
  • In a 9x13-inch pan, place oil.
  • Add potatoes rolling in oil to coat.
  • Arrange chicken and sausage, rolling chicken to coat lightly.
  • Pour the combined tomatoes and seasonings over all.
  • Bake at 350° uncovered for 1 hour 15 minutes.
  • Note: Stacking chicken on top of potatoes is fine.

2 tablespoons extra virgin olive oil
1 lb Italian sausage, sweet and taken out of the casing (or ask the butcher for the ground sausage meat..it saves time)
1 red bell pepper, sliced thinly
1 yellow bell pepper, sliced thinly
1 large yellow onion, sliced
3 garlic cloves, finely minced
2 1/2 cups stewed tomatoes
2 tablespoons fresh basil, chopped
salt
fresh ground pepper
2 tablespoons romano cheese
grated parmigiano-reggiano cheese, to sprinkle over finished dish
top with a few fresh basil leaf
1 lb muti-flavored rotini noodles, cooked al dante

Steps:

  • In a large,skillet brown the sausage until it is cooked through.
  • Drain the fat and drain the sausage on paper towels.
  • In the same pan heat your olive oil add and sauté the peppers, and onions, until the onion is translucent,then add the garlic and sauté gently but do not brown your garlic.
  • This will make the dish bitter.
  • The vegetables should be tender.
  • Stir in the tomatoes, spices, Romano cheese and sausage.
  • Cover the pan and simmer all over a medium-low heat for 8-10 minute.
  • If your mixture seems too thick you can add a little water or red wine.
  • While the meat mixture is cooking, the pasta can be prepared as per directions.
  • You do not want to overcook your pasta.
  • You want a little firmness to your noodles.
  • When you are ready to serve use a large platter.
  • The noodles first, then spoon the meat mixture over.
  • Mix slightly.
  • Sprinkle with the Parigiano-Reggiano and place your fresh basil leaves atop.
  • This goes well with a full bodied red wine, a green salad with Italian oil and vinegar dressing, and most of all a good hard crusted peasant bread.

1 1/2 lbs pre-cooked Italian sausage, cut into 1/2 inch slices
1/2 cup water
2 chopped green onions
2 tablespoons steak sauce, like A1
1/2 teaspoon red pepper flakes
1 teaspoon italian seasoning
1/2 teaspoon salt
1 (28 ounce) can diced tomatoes with juice, the kind with green pepper already added
2 cups uncooked basmati rice, soaked for 8 hours

Steps:

  • Place water, sausage and green onions in crock pot.
  • Add steak sauce, red pepper flakes, Italian seasoning and salt.
  • Cover with lid and cook on low for 6-8 hours or on high for 3 hours.
  • Stir in uncooked rice and tomatoes with juice.
  • Cover and cook an additional 1 hour.

MEATBALLS
1 lb ground beef
1 lb ground pork
3 slice italian bread
1/4 c milk
2 eggs
1/4 c chopped fresh flat leaf parsley
1/3 c pecorino romano cheese
salt and pepper
RAGU
1/2 c extra virgin olive oil
1 medium onion, diced
2 clove garlic, peeled and left whole
2 qt crushed tomatoes or plum tomatoes in sauce
12 basil leaves (or oregano) to your liking
salt and freshly ground black pepper
ADDITIONALLY:
2 lb italian sausage, hot
any pasta to serve with sauce
grated parmesan or romano cheese for garnish

Steps:

  • 1. In a large sauce pot (8-quart size minimum), heat 1/4 cup of the olive oil on a very low flame. Add the diced onion and cook slowly until it has turned translucent. Do not brown the onion, but allow it to almost melt away. Add the garlic cloves and very lightly cook them in the oil until golden before adding the tomatoes and all their juices. Add salt and pepper to taste, and the basil leaves and set the heat on low. Allow the tomatoes to cook at very low heat for at least 2 hours before adding the meat.
  • 2. Make the meatballs: mix the ground beef and veal together in a large bowl. Combine the bread and milk and mash together to form a paste; add the bread to the ground meat. Add the eggs, garlic, parsley, cheese, salt, and pepper to the meat mixture and combine all the ingredients using your fingers to mix uniformly, but do not over mix or the meat will dry out when cooked. Pick up 2 tablespoons of the mixture and roll it into a ball shape, between the palms of your hands. Do this until you have used all the meat. This should yield approximately 24 meatballs.
  • 3. Place the remaining olive oil in a heavy skillet and heat over medium flame. Add the meatballs in 1 layer and brown on all sides before removing. Do this to the remaining meatballs until all are browned to a caramelized color. After all the meatballs have been browned and removed from the skillet, add the sausage links and brown well, following the same method as the meatballs. When all the meat has cooked, add to the tomato ragu, which has been cooking for 2 hours and cook an additional hour. Serve the tomato ragu over rigatoni pasta cooked to directions on box. Serve the meats on another plate as a second course or with the pasta. (We always couldn't wait til the second course!)
  • 4. NOTE: If using plum tomatoes, make sure using a wooden spoon while cooking, you break up the tomatoes. You can also freeze this in batches and use when needed.
  • 5. You can make this sauce your own by adding what herbs you like. Oregano or Basil, All Beef Meatballs if you prefer. My mom did all the combinations. MANGIA!

It's also very good over polenta.

1 lb hot Italian turkey sausage link (about 4)
1 green bell pepper, cut in chunks
1/2 red bell pepper, cut in chunks
1 large onion, cut in chunks
2 ounces white mushrooms, sliced
1 (14 -16 ounce) can tomatoes
1 yellow squash, cut in rounds
2 zucchini, cut in rounds
2 tablespoons tomato paste
1 tablespoon Italian spices (a mix of oregano, basil and thyme)
1 teaspoon garlic powder
salt and pepper
1/2 lb penne pasta, cooked

Steps:

  • Place sausage links along with 1/2 cup of water in non-stick dutch oven. Prick skins. Heat to a boil and cook, turning once until sausages are grey and begin to give off liquid.
  • Add onion chunks and continue to boil.
  • When onion is tender, add mushrooms and peppers.
  • Cook until peppers are almost tender; add squash and zucchini.
  • Continue to cook at a boil to evaporate liquid.
  • When liquid is almost gone, remove sausages, cut each into 4 or 5 chunks, and add back to pot.
  • Add tomatoes with their juice, tomato paste and spices. Stir and heat through.
  • Serve over cooked pasta.

1 red bell pepper, coarsely chopped
1 orange bell pepper, coarsely chopped
1 yellow bell pepper, coarsely chopped
2 medium onions, coarsely chopped
4 large potatoes, peeled and cubed
3/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon fennel seed
1/2 cup water

Steps:

  • In a large nonstick skillet, brown sausage in 1 T olive oil; remove from skillet.
  • Add remaining olive oil to skillet and saute peppers and onions for 5 minutes; remove from skillet.
  • Add potatoes, salt, pepper, Italian seasoning, garlic powder, fennel seed and water to skillet; simmer over medium heat, covered, about 5 minutes.
  • Return sausage, peppers and onions to skillet and mix well. Cover and simmer about 10 minutes, stirring occasionally, or until sausage is done and potatoes are tender.
