24 frozen tater tot rounds
1 pound breakfast sausage
1/4 cup whole milk
8 large eggs
Four 12-inch flour tortillas
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup salsa
1 cup sour cream
1 avocado, sliced
4 tablespoons olive oil.

Steps:

  • Cook the tater tot rounds according to the package instructions. Set aside.
  • Meanwhile, cook and crumble the sausage in a large nonstick skillet over medium-high heat until brown, about 10 minutes. Remove and drain on a paper towel-lined plate. Return the skillet to the heat.
  • Whisk together the milk and eggs in a large pitcher. Add the egg mixture to the skillet and scramble, about 5 minutes. Set aside.
  • To build the wraps, lay out the tortillas. Divide the sausage, eggs, Cheddar, Monterey Jack and tater tot rounds evenly and place on the very center of the tortillas. Top each with salsa, sour cream and avocado. Fold the edges of each tortilla up and over, creasing as needed, to the center and as tight as possible, so that you form a parcel with each one.
  • Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Place one wrap in the skillet, seam-side down. Cook until golden, about 2 minutes, then flip and cook the other side for another minute or two. Repeat with the remaining tortillas and olive oil. Serve hot.

1 medium sweet red pepper, diced
1 small onion, diced
1 (8 ounce) carton frozen egg substitute, thawed
1 (4 ounce) can chopped green chilies
1 teaspoon chili powder
salt
10 8-inch flour tortillas, warmed
1 1/4 cups salsa

Steps:

  • In a skillet cook sausage over medium heat until no longer pink; drain.
  • Transfer to a 13x9-inch baking dish coated with nonstick cooking spray.
  • Sprinkle with red pepper and onion.
  • Combine the egg substitute, green chilies, chili powder and salt; pour over sausage mixture.
  • Bake, uncovered, at 350 for 30-35 minutes or until set.
  • Break up the sausage mixture with a spoon.
  • Place 2/3 cup down the center of each tortilla; top with salsa.
  • Fold one end over sausage mixture, then fold two sides over.

2 whole wheat tortillas
3/4 cup egg substitute
1/4 cup fat free mozzarella cheese
1/2 teaspoon olive oil
1 garlic clove, minced
1 ounce fresh mushrooms
1 ounce zucchini, diced
1 ounce green pepper, diced
1 small shallot, sliced
5 grape tomatoes, halved
1 slice turkey bacon, diced
1 1/2 teaspoons italian seasoning
1/2 teaspoon pepper
salt, to taste
2 tablespoons water
parmesan cheese (optional)

Steps:

  • Heat a non-stick skillet over medium heat. Add olive oil, garlic, bacon, and shallots. Saute for 2 minutes.

1 medium yellow onion, sliced
2 cups Kroger® Brand Mini Sweet Peppers, sliced

5 flour tortillas, 8 in (20 cm)
2 cups shredded mozzarella cheese
