1 pound bulk Italian sausage
3 cups mashed potatoes
1 cup chopped onion
3/4 cup chopped green pepper
2 garlic cloves, minced
1 tablespoon vegetable oil
2 cups sliced fresh mushrooms
2 cups chopped fresh tomatoes
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley or 2 teaspoons dried parsley flakes

Steps:

  • In a skillet, cook sausage until no longer pink; drain. Place in a greased 9-in. square baking dish. Top with potatoes. In the same skillet, saute onion, green pepper and garlic in oil for 5 minutes or until vegetables are crisp-tender. , Stir in the mushrooms, tomatoes, olives, basil, salt and pepper. Spoon over potatoes to within 1 in. of edge of dish. Sprinkle Parmesan cheese and parsley on top. Bake, uncovered, at 350° for 30-35 minutes or until top is lightly browned.

1 1/2 lbs ground chuck
1 1/2 cups chopped onions
2 garlic cloves, minced
1 (32 ounce) jar spaghetti sauce
1/3 cup water
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon pepper
4 medium potatoes, peeled and thinly sliced
2 cups shredded mozzarella cheese

Steps:

  • Cook ground chuck , onion and garlic in a large skillet over medium heat until meat is browned, stirring to crumble meat; drain. Add spaghetti sauce, water, basil, oregano, and pepper, stir well.
  • Spoon 1/3 of meat mixture into a lightly greased 13 x 9 x2 inch baking dish. Top with half of potato slices; cover with 1/3 of meat mixture. Add remaining potato slices and remaining meat mixture. Cover with aluminum foil.
  • Bake at 375°F for 1 hour or until potatoes are tender. Remove foil; sprinkle cheese over casserole. Bake an additional 5 minutes or until cheese melts.
  • Let casserole stand 10 minutes before serving.

1 garlic clove, minced
1/2 teaspoon salt

1 jar (24 ounces) marinara sauce
1/4 cup shredded Parmesan cheese

Steps:

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 5 minutes or until almost tender; drain., Place potatoes in a 13x9-in. baking dish coated with cooking spray. 2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can 98% fat-free cream of chicken soup
4 medium potatoes
2 cups shoestring carrots (I buy them already cut in the fresh vegetable section)
2 teaspoons onion powder
2 tablespoons garlic, minced (I but the jarred already minced garlic)
1 teaspoon Italian herb seasoning
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 cup water

Steps:

  • Preheat oven to 400.
  • Spray 11 X 9 casserole dish with cooking spray.
  • Cut chicken into bite size pieces, and place in casserole dish.
  • Cut potatoes in large bite size pieces and place in casserole dish.
  • Place carrots in casserole dish.

1 lb potato, peeled,cut into even pieces,boiled until tender and then sliced
1 tablespoon lite olive oil
1/2 lb mushroom, sliced
1 medium green pepper, sliced
1 medium red pepper, sliced
1/2 medium onion, chopped
3 eggs, beaten
1/4 teaspoon seasoning salt
1 1/2 cups light cream or 1 1/2 cups whole milk
1/2 lb bacon, fried and crumbled,well drained on paper towell
2 large tomatoes, peeled,seeded and chopped

Steps:

  • After cooking the potatoes let them stand for 5 minutes before slicing.
  • Place the sliced potatoes in a 9" quiche dish or other oven proof dish.
  • Saute the onions& Mushrooms until just soft.
  • Beat together the eggs, cream,salt& pepper.
  • Cover the potatoes with the peppers, mushrooms, onion and half the bacon.
  • Pour in the beaten egg mixture.
  • Cover with foil and bake at 350F degrees for apprx 35 minutes.
  • Uncover add the rest of the bacon.
  • Return to oven uncovered for about 10 minutes or until you can insert a knife and it comes out clean.
  • Watch your bacon doesn't get too brown, if it starts to, loosely place foil over top.
  • Casserole should be a nice golden color.

water
1 tsp salt
6 T. Olive Oil , divided
1 tsp fresh rosemary
2 medium onions, thinly sliced
3 ripe medium tomatoes, sliced
1 T. fresh oregano leaves
1 1/2 cups grated mixed provalone and mozarella cheese

Steps:

  • In medium saucepan, cook potato slices in a large amount of water with salt until tender enough for a for to pierce them easily. Drain. Pour 3 T. olive oil into a large skillet. Add rosemary and heat over low to medium heat. Add potatoes and toss gently to coat with rosemary and oil. Pour a 9x13 casserole. Wipe out skillet, add 2T olive oil and saute onion over low to medium heat until soft about 10 minutes. Layer onions on top of potatoes. Gently toss tomato slices with 1 T olive oil and oregano and then layer on top of onion. Cover with geated cheese. Place on shelf slightly below middle of preheated 350 degree oven and bake for about 30 minutes or until casserole is heated through and chees is bubbly and browned.
