ITALIAN POTATO BOATS
These potatoes are so filling. You can eat them as a side dish or a full meal. Creamy and cheesy, we couldn't get enough of these. Italian dressing mix adds a tangy flavor. The skin crisps up nicely while the middle remains wonderfully creamy. These are seriously delicious.

POTATO BOATS
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Darlene Strohecker. Cooking time doesn't include time it takes to bake the potato.

Tips:
- For perfectly crispy potato boats, bake them at a high temperature (400°F or 200°C) until the edges are golden brown and the potatoes are tender.
- To prevent the potato boats from becoming soggy, use starchy potatoes like Russet or Yukon Gold, which hold their shape well during baking.
- Brush the potato skins with olive oil or melted butter before baking to help them crisp up.
- Season the potato boats generously with salt, pepper, and any other desired seasonings before baking.
- For a cheesy filling, top the potato boats with shredded mozzarella or cheddar cheese before baking.
- For a more flavorful filling, sauté some vegetables like onions, peppers, or mushrooms before adding them to the potato boats.
- Top the potato boats with crumbled bacon, chopped fresh herbs, or a dollop of sour cream before serving.
