4 ounces cream cheese, at room temperature
1/4 cup grated Parmesan, plus more for sprinkling

  • Line a baking sheet with a clean dish towel. Fill a large saucepan fitted with a deep-frying thermometer with 2 inches of oil and bring to 375 degrees F over medium-high heat. 12 wonton skins
1 large egg, separated
1/2 teaspoon dried oregano
3/4 cup pecorino cheese, shredded or 3/4 cup parmigiano-reggiano cheese
