1 tablespoon olive oil
6 medium sweet onions, thinly sliced (about 6 cups)
1/2 teaspoon minced fresh rosemary
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
6 cups beef broth
1/2 cup white wine or additional beef broth
1 tablespoon balsamic vinegar
1 cup grape tomatoes, quartered
1/2 cup fresh basil leaves, thinly sliced
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
5 slices day-old French bread (1-1/2 inches thick), toasted
5 slices part-skim mozzarella cheese

Steps:

  • In a Dutch oven over medium heat, melt butter with the oil. Add the onions, rosemary, 1/8 teaspoon salt and 1/8 teaspoon pepper. Cook for 30 minutes or until lightly browned, stirring occasionally. Add the broth, wine and vinegar; heat through., Meanwhile, in a small bowl, combine the tomatoes, basil, Parmesan cheese, garlic powder and remaining salt and pepper. 8 cups thinly sliced onions

Steps:

  • In a medium, heavy saucepan, heat the olive oil over medium heat.

3 pounds sweet onions, sliced thin
1 teaspoon marjoram
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup Marsala wine
1 tablespoon tomato paste
4 cups beef broth
Romano cheese
1/2 baguette, sliced on diagonal, 1/2 inch thick olive oil
freshly ground pepper

Steps:

  • Melt butter in large pot over medium heat. Add onions and stir to coat. Sprinkle with marjoram, salt and pepper. Reduce heat and cook uncovered on low for 45 minutes, stirring occasionally, or until onions are soft and golden. Increase heat to medium high, add wine, stir and cook 2 minutes. 2 Tbsp butter, unsalted
2 Tbsp olive oil
5 medium sweet onions sliced(vidalia is best)
2 tsp flour
3/4 c marsala wine
1/4 c dry sherry
4 c beef stock
pepper to taste
4 to 6 slices of stale italian bread 3/4 inch thick
3/4 c shredded asiago cheese

Steps:

  • 1. Heat the butter and olive oil in a medium size stock pot over medium heat.Saute the onions,stirring frequently until they become soft.Add the flour and stir well.
  • 2. Add the Marsala and Sherry and simmer until the wine reduces by half.Add the beef stock and simmer for 20 minutes.
  • 3. Ladle the soup into individual bowls. Top each bowl with a slice of bread and sprinkle Asiago cheese.
