1 small onion, chopped
2 garlic cloves, chopped
14 ounces fresh mushrooms, sliced
10 ounces fresh spinach, roughly chopped
1 -2 tablespoon balsamic vinegar
1/4-1/2 cup white wine
kosher salt, to taste
fresh ground black pepper, to taste
chopped fresh parsley, for garnish
1/4 cup grated parmesan cheese

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute onion and garlic in the oil until they start to become tender.

1 lb boneless skinless chicken cutlet
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 tablespoons olive oil
1/4 cup white wine
6 ounces fresh spinach leaves
1 cup sliced mushrooms
14 1/2 ounces crushed tomatoes
4 ounces fresh mozzarella cheese (sliced thinly)
1 garlic clove (finely chopped)
1 tablespoon butter

Steps:

  • Season both sides of chicken with salt and pepper while waiting for saute' pan to heat.
