Time 25m

Yield 8 serving(s)

Number Of Ingredients 8

6 medium potatoes
2 garlic cloves (peeled)
5 tablespoons butter
1 cup low-fat buttermilk
1/2 teaspoon italian seasoning
1/2 teaspoon dried parsley
4 tablespoons parmesan cheese
salt & pepper

Steps:

  • Peel and cube potatoes.
  • Add potatoes & garlic to pot of cold water.
  • Cover and bring water to a boil, then reduce heat and simmer for 15 minutes.
  • Drain the potatoes and garlic cloves.
  • Mash all ingredients with hand masher or mixer.
  • Season with salt & pepper.
  • You can thin them out by adding more regular milk.

Tips:

  • Yukon Gold or russet potatoes are the best choices for Italian mashed potatoes, as they have a smooth, creamy texture when mashed.
  • Be sure to peel and cut the potatoes into evenly sized pieces so that they cook evenly.
  • Don't overcook the potatoes, or they will become gluey. They should be tender but still hold their shape.
  • Mash the potatoes until they are smooth and creamy, but don't over-mash them, or they will become sticky.
  • If you want to make the mashed potatoes ahead of time, you can store them in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
  • When you're ready to serve the mashed potatoes, reheat them over low heat until they are warmed through.

Conclusion:

Italian mashed potatoes are a creamy, flavorful side dish that is perfect for any occasion. They are easy to make and can be tailored to your own taste preferences. Whether you like them plain or loaded with cheese, herbs, or other ingredients, Italian mashed potatoes are sure to be a hit.
