2 (28 ounce) cans tomato puree
6 ounces tomato paste
4 cups chicken stock
2 cups dry red wine
1/4 cup olive oil
2 medium yellow onions, chopped fine
2 stalks celery & leaves, chopped fine
1 carrot, scrubbed and grated
1/2 cup flat-leaf Italian parsley, minced
1/2 lb white button mushrooms, fresh, tops & stems, chopped
1/2 teaspoon red pepper flakes, crushed
1 tablespoon dried oregano, crushed
1 teaspoon dried rosemary
2 bay leaves, whole
1 tablespoon dried basil
2 whole cloves (I do not add) (optional)
1/2 tablespoon fresh ground black pepper
1 teaspoon sugar
2 boneless skinless chicken breasts
1 lb Italian sausage, with casings removed (mild or hot)

Steps:

  • In a deep pot:.
  • Cook sausage until no longer pink, breaking up into pieces. Remove from pan and drain on a paper towel.
  • Add olive oil to pot, sautee onions, garlic, celery and carrot until tender.
  • Add tomato sauce and puree, chicken stock and red wine. Add all remaining ingredients.
  • Bring to boil and simmer for at least 2 hours, stirring often. *I simmer for several hours.

2 cloves garlic, minced
1 small onion, minced
2 tablespoons olive oil
1 lb italian sweet sausage or 1 lb hot Italian sausage
28 ounces canned tomatoes
4 tablespoons cut up fresh basil
1 teaspoon thyme (I have also used oregano instead)
salt and pepper, to taste

Steps:

  • In a large saucepot over medium heat saute the onion in the olive oil.
  • Add garlic and continue to saute.
  • Add sausage meat and brown slightly on all sides.
  • Drain off any fat.
  • Add thyme, tomatoes, salt and pepper, and 2 tablespoons of the basil.
  • When sauce is bubbly, reduce heat and cover.
  • Cook for at least one hour.
  • Add the remaining fresh basil leaves the last fifteen minutes.
  • Serve on cooked soft or firm polenta with extra romano cheese sprinkled over the top.

6 very thin top round steaks, about 8 ounces
Salt and freshly ground black pepper
1 cup grated pecorino cheese, plus more to pass at the table
1/2 cup homemade stale white breadcrumbs or panko, toasted
3/4 cup fresh flat-leaf parsley leaves, chopped
1/4 cup pine nuts or sliced almonds, toasted
2 teaspoons lemon zest
4 ounces salami or prosciutto di Parma, finely chopped
6 cloves garlic, 3 minced or grated, 3 crushed
2 small chile peppers such as Italian cherry or Fresno, 1 seeded and finely chopped (can substitute 1 teaspoon dried red crushed pepper flakes), and 1 thinly sliced
5 tablespoons EVOO
6 links hot Italian sausage
1 teaspoon fennel seeds, 1/3 palmful
1 cup dry red wine
2 large cans Italian San Marzano tomatoes
1 bay leaf
1 small carrot, peeled and halved
1 small rib celery, halved
1 small onion, halved and peeled
2 cups passata or tomato puree
A handful of fresh basil leaves, torn
1 large red or yellow onion, thinly sliced
2 cubanelle peppers, thinly sliced
1 large red bell pepper, thinly sliced
1 cup chicken or beef stock
1 tablespoon tomato paste
2 to 3 tablespoons butter
1 1/2 pounds spaghetti

Steps:

  • Sprinkle the meat on both sides with salt and pepper. In a bowl, combine half of the cheese, the breadcrumbs, 1/2 cup parsley, pine nuts, lemon zest, salami, minced garlic and the finely chopped chile pepper. Top the steaks, leaving a 1-inch border. Roll and tie the meat.
  • Heat about 2 tablespoons of EVOO in a pot over medium-high heat. When the oil smokes, add the meat bundles and brown. Remove the meat bundles, then add the sausages and cook until brown, then remove. Add about 1 tablespoon of EVOO and reduce the heat to medium, then stir in the fennel seeds and cook for 15 seconds. Add the wine and deglaze the pan, then add the tomatoes, bay leaf, carrots, celery and halved onion. Break up the tomatoes, and add the passata, then stir in the basil and season with salt and pepper. Slide the meat and sausages into the sauce and bring to a bubble, reduce the heat and simmer partially covered for a couple of hours, stirring occasionally.
  • In a skillet, heat about 2 tablespoons EVOO, 2 turns of the pan, then add the sliced onions, cubanelles, red bell peppers and sliced chile pepper, and cook to soften, stirring frequently, 12 to 15 minutes. Add the stock, the remaining 1/4 cup parsley, tomato paste and season with salt and pepper. Simmer 15 minutes more.
  • For a make-ahead meal, cool the sauce and meat and refrigerate. Reheat over a medium-low flame on the stovetop until warmed through. Store the onions and peppers separately and reheat over medium-low heat in small skillet.
  • To serve, bring a large pot of water to a boil, salt the water and cook the spaghetti to al dente.
  • Place the meat and sausages on a serving platter. Remove the onions, carrots, celery and bay leaf.
  • Add about 1 cup of the starchy cooking water to the sauce, then put half of the sauce in a gravy boat. Melt the butter into the remaining sauce and toss with the pasta and cheese. Serve the pasta alongside the meat roll and sausage. Top the pasta and meat with more sauce and cheese, and serve the peppers and onions on top of the sausage.

Chicken scarpariello, also known as shoemaker's chicken, is a classic Italian-American dish of chicken, sausage, vinegar, onions and peppers that has all the flavors and textures: Tangy and rich, spicy and sweet, tender and crunchy. Our version is adapted from one found on the menu at Rao's, the reservations-impossible Southern Italian restaurant and celebrity hangout in Harlem. It starts with pan-frying chicken pieces and Italian sausage in a little olive oil until golden brown. Bell peppers, jalapeños, onion and garlic go into the pan and are sautéed until soft. All of that - plus hot peppers, potatoes, vinegar and wine - goes into a roasting pan and into a hot oven until the sauce thickens and the chicken is cooked through. (The potatoes are totally optional, by the way, but they are a nice, pillowy counterpoint to the prickly heat of the peppers.) Serve with a hunk of good bread to mop up the sauce.

3 pounds bone-in, skin-on chicken thighs and breasts, breasts cut crosswise in half
Kosher salt and freshly ground black pepper to taste
2 tablespoons olive oil
4 links Italian sausage (2 hot and 2 sweet), about 1 pound
2 large bell peppers (red, yellow or green), seeded and cut into thin strips
2 jalapeño peppers, halved lengthwise, seeded and cut into thin slices
1 large sweet onion, cut in half lengthwise and sliced
1 teaspoon minced garlic
4 to 8 hot vinegared cherry peppers (or peppadew or pepperoncini), left whole
2 to 3 small red potatoes, peeled, sliced and boiled until tender, but not mushy (optional)
1/2 cup chicken broth
1/2 cup dry white wine
1/4 to 1/2 cup red wine vinegar, to taste
1 tablespoon dried oregano leaves

Steps:

  • Heat the oven to 400 degrees. Season chicken pieces with salt and pepper. Heat the oil in a large pot or Dutch oven over medium-high heat. In batches, brown the chicken, skin side down to start, about 5 minutes on each side. Remove the chicken to a plate. Add the sausage and sauté until brown, about 3 to 4 minutes. (They will not be cooked all the way through at this point.) Remove with a slotted spoon, cut into 1-inch slices and set aside.
  • Remove all but 2 tablespoons oil from the pot and sauté the bell peppers, jalapeños, onion and garlic until soft and beginning to brown, about 5 minutes.
  • Return the sausage to pot, add the cherry peppers, potatoes (if using), chicken broth, wine, vinegar, oregano and season with salt and pepper. Gently mix together, then transfer everything in the pot to a roasting pan. Nestle the chicken in the vegetables and sausage and roast in the oven until chicken is cooked through and sauce has reduced slightly, about 30 minutes.
