Steps:
- Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.
- Keeping the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes. Add the garlic and cook for 1 minute. Add the tomatoes, wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan. Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
- If serving immediately, add the capers and the parsley. Stir to combine and serve. If making ahead of time, transfer the chicken and sauce to a storage container, cool, and refrigerate. The next day, reheat the chicken to a simmer over medium heat. Stir in the capers and the parsley and serve.

Steps:
- Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, tomato paste, bay leaf, Italian seasoning and thyme. Add the chicken breasts; press to submerge.
- Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.
- Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite-size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste.
- Ladle the stew into serving bowls, top with Parmesan cheese and serve with the bread.

Tips:
- Choose the right cut of chicken. Bone-in, skin-on chicken thighs or breasts are best for this stew, as they will remain moist and flavorful during the cooking process.
- Brown the chicken before stewing. Browning the chicken adds flavor and helps to prevent it from becoming dry. To brown the chicken, heat a large pot or Dutch oven over medium-high heat. Add the chicken and cook, turning occasionally, until golden brown on all sides.
- Use a variety of vegetables. This stew is a great way to use up leftover vegetables. Some good options include carrots, celery, onions, potatoes, and zucchini.
- Add flavor with herbs and spices. Fresh herbs, such as rosemary, thyme, and oregano, add a lot of flavor to this stew. You can also use dried herbs or a store-bought Italian seasoning blend.
- Simmer the stew for at least 30 minutes. This will allow the flavors to meld and the chicken to become tender.
- Serve the stew over rice, pasta, or mashed potatoes. This stew is also delicious served with a side of crusty bread.
Conclusion:
This Italian chicken stew is a hearty and flavorful dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. So next time you are looking for a comforting and delicious meal, give this stew a try.
