1/2 cup uncooked small pasta shells
1/2 cup uncooked juniorettes (small spiral pasta)
1 small red bell pepper, coarsely chopped (1/2 cup)
1 can (15 to 16 ounces) kidney beans, rinsed and drained
1 medium zucchini, coarsely chopped (2 cups)

Steps:

  • Heat oil in 3-quart saucepan over medium-high heat. Add chicken; sprinkle with 1/4 teaspoon of the Italian seasoning. Cook and stir 3 to 5 minutes or until browned.

8 bone-in, skin-on chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 small onion, chopped
4 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
1 tablespoon tomato paste
1/2 cup dry white wine
2 cups low-sodium chicken broth
One 15-ounce can cannellini bean, rinsed and drained
One 14-ounce can diced tomatoes
1 teaspoon dried oregano
1/3 cup grated Parmesan, plus more for serving
Fresh oregano for garnish (optional)

Steps:

  • Preheat the oven to 425 degrees F. Sprinkle the chicken with salt and pepper. Heat the oil in a large oven-proof skillet over medium-high heat. Add the chicken, skin side down, and cook, until browned on both sides, about 4 minutes per side. Transfer the chicken to a plate.
  • Reduce the heat to medium, add the onion, garlic and red pepper flakes and cook until the onions are soft, about 7 minutes. 1 onion, halved
1 carrot, quartered
3 stalks celery & leaves, chopped
2 (14 1/2 ounce) cans chicken broth
2 cups water
2 chicken bouillon cubes
2 bay leaves
1 (14 1/2 ounce) can diced tomatoes, undrained
6 -8 green onions, thinly sliced
1/2 cup chopped parsley
1/4 cup ketchup
1 teaspoon salt
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried basil
2 garlic cloves, minced
1/2 teaspoon pepper
2 (15 1/2 ounce) cans kidney beans, rinsed and drained
1/4 cup romano cheese, grated

Steps:

  • In a 5 quart Dutch oven, combine the first eight ingredients and bring to a boil.
  • Reduce heat and simmer 1 1/2 hours.
  • Remove chicken to a platter to cool and strain the broth, discarding the vegetables and bay leaves.
