¼ cup grated Parmesan cheese
¼ teaspoon ground black pepper
1 (14 ounce) jar marinara sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

1 pound ground bison
1 pound ground pork
2 eggs, beaten
1 tablespoon garlic, minced
2 teaspoons sea salt
2 teaspoons dried basil
2 teaspoons dried oregano
1/3 cup fresh parsley and cilantro, chopped
1 tablespoon stone ground mustard
1/2 teaspoon red chili flakes
1/2 cup ketchup + more for drizzle when baking
2 tablespoons Worcestershire
1/2 teaspoon sea salt
1 teaspoon hot sauce (your choice)
1 1/2 cups Italian bread crumbs
1 teaspoon ground cumin
4 tablespoon extra virgin olive oil (divided)

Steps:

  • Preheat oven to 375 degrees fahrenheit. Crumble the ground meat together in a large mixing bowl. Set aside. In another small bowl, combine the beaten eggs, garlic, salt, basil, oregano, parsley/cilantro, mustard and chili flakes and blend. Blend this mixture into the meat then add the bread crumbs and blend well. Form into a meatloaf. Drizzle half of the olive oil in a skillet or baking dish and place the meatloaf in the pan. Remove and let it rest about 15 minutes before cutting and serving.
