2 - large yams or sweet potatoes
3 - eggs
1/2 cup(s) philadelphia brand cream cheese
1 cup(s) light brown sugar
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/2 cup(s) shredded coconut or 18 oz drained crushed pinapple
2 tablespoon(s) flour
1 1/2 cup(s) milk
1 teaspoon(s) vanilla
3 tablespoon(s) melted butter
1 teaspoon(s) salt

Steps:

  • Preheat oven 350.
  • Beat eggs and cream cheese together.
  • Mix in brown sugar,coconut,flour,melted butter,salt,milk,nutmeg,cinnamon,vanilla.
  • Add in shredded yams.
  • Pour mixture into butterd casserol dish.
  • Bake for 1hour.

1 (16 ounce) can peach slices, drained
1 1/2 cups miniature marshmallows

Steps:

  • Combine sugar, flour and nutmeg; cut in butter until mixture resembles coarse crumbs. Add nuts.
  • Arrange yams and peaches in 1 1/2 quart casserole; sprinkle with sugar mixture.
  • Bake at 350F for 35 minutes.
  • Sprinkle with marshmallows. Broil until lightly browned.
  • Serve immediately.

2-1/2 pounds yams or sweet potatoes, peeled and cubed
1/2 cup egg substitute
1/4 cup packed brown sugar
1/2 teaspoon salt

TOPPING:
1 tablespoon butter
2 tablespoons finely chopped pecans
2 tablespoons brown sugar
1/4 cup Special K

  • Place yams in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain yams and place in a large bowl; mash.
