2 cups boiling water
6 ounces dark rum, such as Myers's
4 slices fresh ginger

Steps:

  • In a medium bowl, use a wooden spoon to combine the sugar, butter, maple syrup, ground ginger and allspice. Mix until well combined.
  • Transfer the mixture to a pitcher. Add the boiling water and rum. Divide the fresh ginger among 4 mugs or coffee cups and portion the cocktail. Serve hot.

Twas, perfection , so I am placing it here to share with all of you. Do you love ginger, if so, than this is the drink for you, spicy and refreshing and oh so dangerous because it goes down way to easy. If you prefer a weaker drink, it is also good made with just 1 oz of dark rum.

2 ounces dark rum, Havana Club
10 ounces ginger beer
1 ounce soda water
1 teaspoon ginger, fresh, minced
8 ice cubes
1 candied ginger, slice (garnish)

Steps:

  • Fill glass with ice, pour in rum, then the ginger beer. top with the soda water and grated ginger, stir, garnish with a slice of candied ginger, then, sit back and enjoy, it will take you away to somewhere warm and breezy.
