Number Of Ingredients 14

1 1/2 pounds ground beef (equal mix of ground brisket, chuck and rib-eye)
Kosher salt and freshly ground black pepper
1 small sweet onion, sliced into thin rings
8 slices Cheddar
4 tablespoons butter, at room temperature
4 English muffins, split
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
2 tablespoons ketchup
2 tablespoons prepared horseradish
2 tablespoons finely diced gherkins
1 tablespoon sliced chives
12 dill pickle slices, if desired
8 Gem lettuce leaves, cut to the size of the English muffins

  • Prepare a gas grill with a grill pan for medium heat.
  • Gently form the ground beef into 4 loosely packed patties, making sure not to over work the meat. Season the burgers with salt and pepper.
  • Place 4 onion rings on the grill and press a burger patty onto each one. Let this cook together until the burgers caramelize on that side, 3 to 4 minutes. Flip the burgers and top with 2 slices cheese (on top of the onions), then continue to cook to your desired temperature.
  • Spread 1 tablespoon butter onto each English muffin. Season with salt and pepper, then toast on the grill.
  • In a mixing bowl, combine the Dijon, mayonnaise, ketchup, horseradish, gherkins and chives. Fold together until evenly incorporated.
  • To assemble, spread the special sauce on both slices of each English muffin. Stack the burgers on the bottom slices, then the pickles (if using), lettuce and top slices of English muffin.

JAPANESE BURGERS WITH WASABI KETCHUP

Japanese Burgers With Wasabi Ketchup image

This burger recipe comes from the chef Tadashi Ono's 2011 book, "The Japanese Grill: From Classic Yakitori to Steak, Seafood and Vegetables," written with Harris Salat. The writer Alex Witchel raved about it in The Times that same year: "Half beef, half pork, it stayed uncannily moist despite being cooked through. Perfection."

Time 30m

Yield 4 servings

Number Of Ingredients 13

1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon wasabi paste
1/2 cup panko or other dry bread crumbs
1/4 cup whole milk
8 ounces ground sirloin
8 ounces ground pork
1/4 cup finely chopped white onion
1 1/2 teaspoons soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
Sesame oil, for coating hands
4 brioche buns, for serving

Steps:

  • Prepare the wasabi ketchup: Whisk together the ketchup, soy sauce and wasabi paste.
  • Make the burgers: Prepare a grill for medium heat. In a large mixing bowl, combine the bread crumbs and milk and let rest 2 to 3 minutes. Add the sirloin, pork, onion, soy sauce, salt and pepper. Knead the meat until it becomes sticky and binds together; divide into 4 parts.
  • Lightly dab your hands with sesame oil. Using your palms, roll each part of the meat into a ball, then pat the ball flat, shifting it from hand to hand, to form a 1/2-inch-thick patty. Make a shallow indentation across the center of the patty with the side of your hand, to keep it from puffing while it grills.
  • Grill the burgers, flipping twice, until browned and cooked through, with no pink in the middle, about 10 minutes. (Alternatively, they may be broiled or sautéed.) Let rest for 2 minutes. Serve on buns, topped with some wasabi ketchup.

Tips:

  • Choose high-quality ground beef. The quality of the ground beef you use will greatly impact the flavor of your hamburgers. Opt for ground chuck or sirloin, which have a good balance of fat and lean meat.
  • Don't overwork the meat. Overworking the meat will make the hamburgers tough. Mix the ingredients just until they are combined.
  • Form the patties gently. Don't press down on the patties too hard, as this will also make them tough. Just gently shape them into patties that are about 1-inch thick.
  • Use a cast iron skillet or griddle. A cast iron skillet or griddle will give you the best sear on your hamburgers. If you don't have one, you can use a regular skillet, but make sure it's well-seasoned.
  • Cook the hamburgers over medium heat. Cooking the hamburgers over medium heat will help them cook evenly without burning them.
  • Flip the hamburgers only once. Flipping the hamburgers too often will make them dry. Flip them only once, when they are cooked about halfway through.
  • Let the hamburgers rest before serving. Letting the hamburgers rest for a few minutes before serving will help the juices redistribute throughout the meat, resulting in a more tender and flavorful hamburger.

Conclusion:

Japanese-style hamburgers are a delicious and unique twist on the classic American hamburger. They are made with a blend of ground beef and pork, and are seasoned with a variety of Japanese ingredients, such as soy sauce, ginger, and garlic. The hamburgers are then cooked on a hot griddle and served with a variety of toppings, such as lettuce, tomato, onion, and cheese. If you are looking for a new and exciting way to enjoy hamburgers, give Japanese-style hamburgers a try.
