From Good Food Magazine, March 1986. This is not only a great dessert for St. Patrick's Day, but works well for other special occasions. The swirl of raspberry preserves gives it a nice party touch. The 4 hours of freezing time has not been included in the preparation time.

6 large egg yolks
1/3 cup granulated sugar
1/4 cup Irish whiskey
2 cups heavy cream
1/4 cup confectioners' sugar
1 teaspoon vanilla extract
1/4 cup raspberry preserves

Steps:

  • Beat egg yolks in mixer bowl, gradually adding granulated sugar, and continue beatint until thick and pale, about 5 minutes. Beat in whiskey gradually. Transfer to large bowl.
  • Beat cream, confectioner's sugar, and vanilla together in mixer bowl until stiff. Gently fold whipped cream, a third at a time, into egg yolks.
  • Spoon cream mixture, alternating with thin layers of preserves, into 8 parfait glasses. Freeze at least 4 hours or overnight.

Warning: it is very potent, just one of these will warm you up and basically make you good for nothing afterwards - what a treat! It is super to drink at night if you have a sore throat. My friend said this is what the Irish drink if they don't feel good but don't wait until you have a cold to try this recipe!

8 whole cloves
1 (1/4 inch thick) slice of lemon
1 tablespoon white sugar
¾ cup boiling water
1 (1.5 fluid ounce) jigger Irish whiskey

Steps:

  • Press cloves into the peel of the lemon slice all the way around. Set aside. Measure the sugar into a wine glass. Place a metal spoon into the glass with the curved side facing upwards. Pour the boiling water over the back of the spoon. This will keep your wine glass from shattering. Stir to dissolve the sugar. Pour in the whiskey and add the lemon slice. Let steep for about 1 minute before drinking.
