I love being Irish!

Provided by Brandy Bender

Categories     Roasts

Time 1h10m

Number Of Ingredients 12

2 lb pork tenderloin, or 6 to 8 boneless lean pork chops
2 Tbsp butter
2 Tbsp hard cider (apple wine) or water
salt and pepper
----------------------------------------------------
stuffing-
4 1/2 c potatoes, coarsely mashed
1/4 c butter
1 onion
2 large cooking apples, chopped
1 handful chopped fresh sage and thyme
salt and pepper

Steps:

  • 1. Make stuffing: To potatoes, add butter, onion, apples, herbs, salt and pepper. Mix well.
  • 2. Rub meat with salt, pepper and butter. Pour cider or water into 3 -quart casserole dish. Place meat along edges of dish.
  • 3. Cover loosely with foil and bake 1 hour at 350 degrees (F).

Tips:

  • Prep the potatoes ahead of time: Boil and mash the potatoes up to two days in advance and store them in the refrigerator. This will save you time on the day you're making the stuffing.
  • Use fresh herbs: Fresh herbs like parsley, thyme, and rosemary add a delicious flavor to the stuffing. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't overstuff the turkey: Stuffing expands as it cooks, so be sure not to overstuff the turkey. A good rule of thumb is to use about 1 cup of stuffing per pound of turkey.
  • Bake the stuffing in a greased baking dish: This will help to prevent the stuffing from sticking to the dish and will make it easier to serve.
  • Serve the stuffing hot: Stuffing is best served hot out of the oven. If you're making the stuffing ahead of time, you can reheat it in a 350°F oven until it is warmed through.

Conclusion:

Irish potato stuffing is a delicious and versatile side dish that is perfect for Thanksgiving, Christmas, or any other special occasion. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the best Irish potato stuffing that your family and friends will love.
