Time 1h40m

Number Of Ingredients 8

8 to 10 medium potatoes
8 oz cream cheese, softened
8 oz sour cream
1/2 c melted butter
1/4 c chopped chives
1 clove garlic, minced
2 tsp salt
dash(es) paprika (optional)

Steps:

  • 1. Cook, drain, and mash potatoes.
  • 2. Beat cream cheese and sour cream together until smooth. Add potatoes and all remaining ingredients, and then beat until combined. Spoon into lightly buttered two-quart casserole, cover and refrigerate.
  • 3. Remove from refrigerator 15 minutes before baking. Uncover; sprinkle paprika on top (if desired). Bake uncovered at 350 degrees about 40 minutes, or until thoroughly heated.

Tips:

  • Use Russet Potatoes: Russet potatoes are the best choice for Irish potato casserole because they have a high starch content, which helps to thicken the casserole and give it a creamy texture.
  • Boil Potatoes Until Tender: Make sure to boil the potatoes until they are tender before slicing them. This will help them to cook evenly in the casserole.
  • Use Fresh Vegetables: Fresh vegetables, such as onions, celery, and carrots, will add flavor and texture to the casserole. If you don't have fresh vegetables on hand, you can use frozen vegetables instead.
  • Season Generously: Don't be afraid to season the casserole generously with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or dried thyme, to taste.
  • Top with Cheese: A layer of grated cheese on top of the casserole will add a golden brown crust and make it even more delicious. You can use any type of cheese you like, but cheddar cheese is a classic choice.
  • Bake Until Golden Brown: Bake the casserole in a preheated oven until the top is golden brown and the potatoes are tender. This usually takes about 30 minutes.

Conclusion:

Irish potato casserole is a classic comfort food that is perfect for any occasion. It is easy to make and can be tailored to your own taste.
