IRISH POTATO CASSEROLE
Steps:
- Cut the potatoes into cubes and place in a large stockpot

- Reduce the heat to medium-low, cover, and simmer for 20 minutes or until the potatoes are fork-tender
- Preheat the oven to 350F when the potatoes are almost done cooking
- Meanwhile, in a large mixing bowl, add all of the other ingredients (you can start to mix them now, but if you wait until the potatoes are in there it softens everything and makes it easier to mix)
- When the potatoes are done, drain the pot then add the potatoes to the large mixing bowl
- Use a potato masher to thoroughly combine everything
- Spoon the potato mixture into a 9×13 glass baking dish and smooth with a rubber spatula
- Bake for about 30 minutes, until the edges are bubbling
- Serve warm

Steps:
- Butter 6- to 8-cup ovenproof dish. Cook potatoes in large pot of boiling salted water until tender, about 12 minutes. Drain potatoes; return to same pot. Add cream cheese and mash well. Mix in sour cream and milk, then chives. Season potatoes with salt and pepper. Spoon potatoes into prepared dish; dot with chilled butter. (Can be made 2 hours ahead; let stand at room temperature.)
- Preheat oven to 375°F. Bake potatoes until heated through and beginning to brown on top, about 30 minutes.
Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are the best choices for this casserole because they hold their shape well and have a creamy texture.
- Use fresh chives: Fresh chives add a delicate oniony flavor to the casserole. If you don't have fresh chives, you can use 1/4 teaspoon dried chives.
- Don't overcook the potatoes: The potatoes should be tender but still have a little bit of bite to them. Overcooked potatoes will become mushy.
- Use a sharp cheddar cheese: A sharp cheddar cheese will give the casserole a more intense flavor. If you don't have sharp cheddar, you can use a mild cheddar cheese, but the flavor will be less pronounced.
- Serve the casserole hot: This casserole is best served hot out of the oven. You can also make it ahead of time and reheat it in the oven before serving.
Conclusion:
Irish potato and chive casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover potatoes, and it is also a budget-friendly dish. This casserole can be served with a variety of main dishes, such as roasted chicken, grilled salmon, or beef stew. It is also a great dish to bring to potlucks and parties.
