My first sandwich challenge was to have the colors of the Irish flag which are green, white and orange included in a sandwich. So, the asparagus, eggs & orange pepper worked well together. It was my first time to try asparagus in a sandwich & it tasted delish. The only thing I didn't make it on was the bread...if doing again I would need a thicker bread. My bottom bread got too soggy half way through eating it. I even toasted it too. Well, it is certainly a healthy sammie and yummy too. I enjoyed making it and hope to pay tribute to my wonderful Irish heritage. Happy St. Patrick's day to you.

7 - stalks of asparagus
4 small white button mushrooms
2 small fingerling peppers or serrano (same thing)
2 - 3 tablespoon(s) fresh grated tipperary irish cheddar cheese extra sharp
1/3 cup(s) sliced orange pepper, sauteed
1/2 cup(s) or a little less of egg beaters (egg whites)
1 1/2 tablespoon(s) cottage cheese
2 tablespoon(s) orange marmalade
1/2 teaspoon(s) or less of red cayenne pepper
- white pepper and salt (season as desired)
2 slice(s) of thick sliced pumpernickel bread

Steps:

  • Gather ingredients
  • I steamed my asparagus and then blanched it to keep it's green color. Saute your mushrooms in a pan with a little olive oil. Mix your egg whites together with the cottage cheese and pour on top of your mushrooms and cook till done. Season with salt and white pepper.
  • In another pan at the same time saute your orange peppers and sliced serranos in a little olive oil. Toast your bread in oven or toaster. Now assemble with asparagus on the bottom and then your egg mixture. Grate your fresh white sharp cheddar over you hot eggs so it will melt. Place your oranges and serrano peppers on top. NOw, mix your cayenne into your marmalade and spread on the top piece of your bread and place on the peppers.
  • I served this with plain hummus & added some green dye to it with veggie sticks that were flavored potato, tomato and spinach. The dessert was mini chocolate gobbs with green filling. The drink was Gatorade G2 tropical blend that had a wonderful green color to it & tastes good too.

Here is my Irish Flag sandwich for the St. Patrick's Day Sandwich Challenge. What is more Irish than cream cheese and lox? Honestly, this is an absolute delight. I think I found the end of the rainbow in this one.

8 ounce(s) cream cheese, room temperature
1/4 cup(s) mayonnaise
1 tablespoon(s) dill weed (dried) or about 2 tsp fresh chopped
1 tablespoon(s) chopped chives
2 tablespoon(s) rehydrated dried mixed veggie pieces (optional)
1/16 teaspoon(s) garlic powder (or to your taste)
6 ounce(s) salmon, smoked (mine was sockeye with applewood smoke) very thinly sliced
1 bunch(es) washed watercress
4 - hoagie rolls (about 5 to 6" x2 1/2")

Steps:

  • Place cream cheese and mayonnaise in a bowl and mix thoroughly with a fork or whisk. (If using the optional dried veggie mix, rehydrate in a small bowl or cup with hot water or in the microwave for 30 seconds, set aside for the veggies to sufficiently soften, then drain and squeeze out any excess moisture.) Add dill, garlic powder, chives and rehydrated veggies (if using), and mix well.
  • Wash and shake dry the watercress, split the hoagie rolls and spread with 1/4th of the cream cheese mixture, top and bottom. Add watercress to your liking and then layer about 1 1/2 oz. of smoked salmon on each roll. Place top on roll and serve. (If you like, you can toast the rolls in a hot skillet with a little butter before making the sandwiches.) Serve with orange carrot sticks, green olives and white cucumber or zucchini slices on a small bed of watercress. Add dab of spread on the side to dip veggies.
  • You could substitute the pre-prepared Garden Veggie Cream cheese and just add a little extra dill and some mayo to it, if desired. I also think this would make an elegant brunch sandwich on mini croissants.

⅛ cup soy sauce
¼ cup Worcestershire sauce
1 lemon, juiced
salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • In a medium nonporous bowl, combine the soy sauce, Worcestershire sauce and lemon juice and mix well. Place the pork in the bowl, turning to coat well on all sides. Cover and refrigerate for at least two hours, allowing the pork to marinate.
  • Preheat oven to 375 degrees F (190 degrees C). Place tenderloin in a 9x13 inch baking dish.
  • Bake, uncovered, at 375 degrees F (190 degrees C) for 20 to 30 minutes, or until internal pork temperature reaches 140 degrees F (60 degrees C).
  • Remove pork from oven. Drain the liquid from the baking dish and reserve for later as a gravy, if desired. Roll out the two puff pastry sheets and wrap each piece of tenderloin in the dough, sealing the edges to completely enclose the meat. Return this to the baking dish.

1 box white cake mix
plus ingredients called for on box
4-5 drops each orange and green food coloring
1 recipe white frosting, home made or store bought canned frosting
1 pkg m and m's (use only orange and green candies)

Steps:

  • 1. NOTE: One large package of M and M's should have enough green and orange candies to make this recipe. Use the rest for M and M's cookies if you like.
  • 2. Preheat oven and mix cake batter according to directions on box. Separate batter into 3 equal parts each in a separate small bowl. Use food coloring and color 1 part of batter green, 1 part orange, and leave one part white. Line cupcake pans with paper liners. Spoon some of each color of batter into each paper lined cupcake. You can leave as is or swirl batter a bit to look tie dyed. Bake according to directions on box.
  • 3. Cool cupcakes completely before frosting with white icing. Drop a few orange and green M and M's on each cupcake.
