Time 50m

Yield 12 Muffins

Number Of Ingredients 10

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon instant coffee granules
2 teaspoons coffee liqueur
2 teaspoons Irish whiskey
milk
1 egg
8 tablespoons melted butter or 8 tablespoons melted margarine

Steps:

  • Line 12 muffin-tin cups with paper liners.
  • Preheat oven to 375.
  • In a bowl, combine flour, baking powder, salt and sugar.
  • Stir well.
  • In a 1-cup measure, dissolve coffee granules in coffee liqueur and whiskey.
  • Add enough milk to measure 1 cup.
  • Whisk egg in a bowl with coffee-milk mixture.
  • Whisk in melted butter.
  • Gently stir liquid into dry ingredients just until moistened.
  • Spoon into muffin tin.
  • Bake at 375 for 25 minutes, or until the top springs back when gently touched.

Tips:

  • Use room temperature ingredients: This will ensure that your muffins mix together smoothly and bake evenly.
  • Don't overmix the batter: Overmixing can result in tough muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full: This will allow the muffins to rise properly and prevent them from overflowing.
  • Bake the muffins at a high temperature for the first 10 minutes: This will help them to rise quickly and develop a golden brown crust.
  • Reduce the oven temperature after 10 minutes: This will help the muffins to finish baking evenly without overcooking.
  • Insert a toothpick into the center of a muffin to check for doneness: The toothpick should come out clean when the muffins are done.
  • Let the muffins cool for a few minutes before serving: This will help them to set and make them easier to handle.

Conclusion:

Irish coffee muffins are a delicious and easy-to-make treat that are perfect for any occasion. With their moist texture, rich flavor, and irresistible aroma, these muffins are sure to be a hit with everyone who tries them.
