Number Of Ingredients 12

CRUMBLE TOPPING:
4 ounces butter, plus extra for greasing
5 ounces soft light brown sugar
2 large free range eggs
7 ounces plain flour, sifted
1 tablespoon baking powder
1 pinch salt
1 teaspoon ground cinnamon
11 ounces peeled, cored and sliced cooking apple (Shouldn't be more than one large apple)
2 ounces vanilla sugar (or substitute caster sugar)
2 ounces plain flour
2 ounces butter

Steps:

  • Preheat the oven to 360°F, grease and line a 8-inch cake tin with a removable base. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Fold the dry ingredients into the wet and mix until you have a thick cake batter. Stir in the apple slices and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin. Using a hand blender with a food processor attachment, blend the ingredients for the crumble topping until you get left with rough crumbs. You can also do this by hand in a bowl using your fingertips to combine the ingredients together. Sprinkle the crumble topping on top of the batter. Bake in the oven for 40-45 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and leave to cool.

Time 1h10m

Number Of Ingredients 18

FILLING:
1/3 c water
2 Tbsp irish whiskey
1/2 c golden raisins
1 tsp vanilla extract
4-5 large tart apples, peeled, cored and sliced (granny smiths)
1/3 c granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
CRUMBLE:
1 c all purpose flour
1/2 c packed light brown sugar
6 Tbsp butter
1 c oatmeal, uncooked (not instant)
CREAM SAUCE:
1 c heavy cream (whipping)
2 Tbsp honey
2 Tbsp irish whiskey

Steps:

  • 1. To make the filling, in a small saucepan over medium heat, bring the water and whiskey to a boil. Stir in the raisins and vanilla. Remove from the heat, cover, and let stand for 1 hour, or until the raisins have absorbed most of the liquid.
  • 2. Preheat the oven to 375°F. Butter an 8- or 9-inch square glass baking dish.
  • 3. In a large bowl, toss the apples with the sugar, cinnamon and ginger. Stir in the raisins and cooking liquid and arrange in the prepared pan.
  • 4. To make the crumble, combine the flour, brown sugar and butter in a food processor. Pulse 4-5 times to form coarse crumbs. Stir in the oats. Sprinkle the mixture over the fruit and bake for about 40 minutes, or until the topping is golden and the apples are tender. Serve warm or at room temperature.
  • 5. Irish Whiskey Cream Sauce In a deep bowl, beat the cream with an electric mixer on high until soft peaks form. Dissolve the honey in the whiskey. Fold the honey mixture into the whipped cream and spoon over the crumble.

Tips

  • Use a variety of apples for a more complex flavor. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Peel and core the apples before slicing them. This will help to prevent the crumble from becoming too mushy.
  • Toss the apples with sugar, lemon juice, and spices before adding them to the crumble. This will help to enhance their flavor.
  • Use a combination of butter and flour to make the crumble topping. This will help to create a crispy texture.
  • Sprinkle the crumble topping evenly over the apples. This will help to ensure that the crumble is cooked evenly.
  • Bake the crumble in a preheated oven until the topping is golden brown and the apples are bubbling.
  • Serve the crumble warm with a scoop of vanilla ice cream or whipped cream.

Conclusion

Irish apple crumble is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tangy apples, crispy crumble topping, and creamy vanilla ice cream or whipped cream, it is sure to be a hit with everyone.
