BREAD MAKER DOUGHNUTS

Time 1h35m

Yield 16

Number Of Ingredients 8

½ cup warm milk
½ beaten egg
¼ cup butter
2 cups all-purpose flour
¼ cup white sugar
1 teaspoon salt
1 teaspoon active dry yeast
8 cups vegetable oil for frying

Steps:

  • Place the milk and egg into the pan of your automatic bread machine, and add the butter, flour, sugar, salt, and yeast in that order, with the yeast on top. Select the dough setting, and start the machine.
  • When the dough cycle is finished, remove the dough to a floured work surface, and knead a few times to collapse all the bubbles. Cut the dough into 16 pieces, cover them with a damp cloth, and allow to rest for 20 minutes.
  • Stretch each ball out into a disk about 1/4 inch thick, and use a small cutter to cut a hole in the center (I used the top of a salt shaker; a bottle top works good too). Let the doughnuts rise on the floured surface until doubled, 30 to 40 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently place a few doughnuts at a time into the hot oil, and fry until they float to the top and turn golden brown, about 3 minutes. Flip the doughnuts over, and fry on the other side. Remove from the oil, and drain on paper towels.

DOUGHNUT MACHINE MINIS

Doughnut Machine Minis image

This is a batter recipe I found to use with an electric mini doughnut machine I have (a bit like a sandwich toaster but with seven rings to take a spoonful of batter each) - when I couldn't find the instruction leaflet with the recipe in it. After cooling slightly on a rack, I warm a spoonful of apricot jam with a splash of water and brush on lightly before dipping in hundreds and thousands or chocolate flakes. This quantity makes about 20, easiliy doubled if you are catering for a children's party or such.

Tips:

  • To ensure your doughnuts turn out perfectly, make sure the oil temperature is between 350°F and 375°F. If the oil is too hot, the doughnuts will brown too quickly and not cook through. If the oil is too cold, the doughnuts will absorb too much oil and become greasy.
  • Don't overcrowd the fryer. If you add too many doughnuts at once, the oil temperature will drop and the doughnuts will not cook evenly.
  • To prevent the doughnuts from sticking to the fryer basket, spray it with cooking spray or grease it with oil before adding the doughnuts.
  • Once the doughnuts are cooked, drain them on paper towels to remove any excess oil.
  • To add a variety of flavors to your doughnuts, try coating them in cinnamon sugar, powdered sugar, or sprinkles.
  • For a fun twist, try filling your doughnuts with jelly, custard, or cream.
