2 medium cucumbers
2 medium firm tomatoes
1 red onion
Handful parsley leaves
Small handful mint leaves
1 tbs sumac
2 tbs extra virgin olive oil
1 tbs lemon juice
Salt and ground pepper to taste

Steps:

  • Cut the cucumbers, tomatoes and onions into small cubes and place into a bowl
  • Coarsely chop the herbs and add to the chopped vegetables
  • Add sumac, olive oil, lemon juice and salt to taste

This is a recipe for a very tasty salad using the Middle Eastern spice Sumac / Sumaq. In Iraq, it is lmown as Summag - hence the name Summag salad. It is easy to make & comes fromm an Iraqi blog on the 'net.

2 large cucumbers
1 large tomatoes
1/4 medium onion
1 tablespoon sumac
salt
olive oil

Steps:

  • Peel the cucumbers in stripes. Slice the cucumbers in half, length-wise. Slice these halves into semi-circles, each no more than 1-2 mm thick. Put the cucumbers in the salad bowl.
  • Chop the tomato into 'salad size' pieces- not too large and not too small. Add to the cucumber.
  • Slice the onion into long, pieces and add to the tomato and cucumber.
  • Drizzle about 1 tablespoon of olive oil over the salad and add the sumac and salt to taste. Mix well. Enjoy.

2 large sweet onions
1 1/2 teaspoons ground sumac

Steps:

  • Peel and slice the onions as thinly as you possibly can (paper-thin would be great here, if you can manage it).
  • Toss the onions with the sumac (or the paprika, cayenne and lemon juice, if using).
  • Serve as a condiment on any Middle Eastern type sandwich (such as kebab).

Tips:

  • For the best flavor, use fresh sumacs when they are in season. If you can't find fresh sumacs, you can use dried sumac berries, but be sure to soak them in water for at least 30 minutes before using.
