Time 50m

Number Of Ingredients 14

2 large chicken breasts
15 oz can black beans (drained and rinsed)
15 oz can white beans (drained)
1 medium onion (chopped)
15 oz can corn with juice
10 oz can Rotel diced tomatoes with green chilis ((with their juice))
1/2 cup chicken broth or stock
1 tsp chili powder (or to taste)
1 tsp cumin powder
0.4 oz packet ranch dip or dressing mix*
8 oz package cream cheese (cut into 6 pieces)
1/2 cup chopped Cilantro (for garnish)
1 avocado (diced, for garnish)
Tortilla chips or baked potatoes to serve

Steps:

  • Place all of your ingredients into your instant pot bowl in the following order: 2 chicken breasts, drained black and white beans, chopped onion, corn with juice, tomatoes with juice, and 1/2 cup chicken broth.
  • Add 1/2 to 1 tsp chili powder (use 1/2 tsp to make it kid friendly), 1 tsp cumin, ranch packet. Stir everything to combine, getting some of the juice under the chicken to keep it from scorching.
  • Cut cream cheese into 6 pieces and place over the top of chili. Cover and seal with lid, switch the valve to the "sealing" position and cook for 20 min on manual high pressure. Once it is done cooking, let it naturally depressurize for 10 min then switch the valve to the "venting" position to completely release steam before opening lid.**
  • Remove the chicken breasts to a plate and shred apart with 2 forks. Stir everything together in the pot to melt the cream cheese into the chili then return the shredded chicken and stir to combine. Serve garnished with avocado and cilantro if desired.

Just as warm, comforting, and quick as you might think.

Provided by Jasmine Smith

Time 45m

Number Of Ingredients 14

1 tablespoon olive oil
1 (10-oz.) yellow onion, chopped (2 cups)
3 garlic cloves, minced (1 Tbsp.)
1 pound boneless, skinless chicken breasts
2 cups chicken broth
2 (16-oz.) cans great Northern beans, drained and rinsed
2 (4.5-oz.) cans chopped green chiles, undrained
1 teaspoon ground cumin
1 teaspoon chili powder
3/4 teaspoon kosher salt
1/4 teaspoon cayenne pepper
4 ounces cream cheese, cut into cubes
1/4 cup chopped fresh cilantro, plus more for garnish
Sour cream, tortilla strips, lime wedges, shredded Monterey Jack cheese

Steps:

  • Select SAUTÉ setting on a programmable pressure multicooker (such as Instant Pot). Select HIGH temperature setting, and allow to preheat 3 to 4 minutes. Add oil to cooker. Add onion and garlic; cook, stirring occasionally, until onion is translucent, about 5 minutes. Press CANCEL.
  • Add chicken, chicken broth, beans, green chiles, cumin, chili powder, salt, and cayenne pepper to cooker. Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position. Select MANUAL/PRESSURE COOK setting. Select HIGH pressure for 12 minutes. (It will take 14 to 16 minutes for cooker to come up to pressure before cooking begins.) When cooking is finished, carefully turn steam release handle to VENTING position, and let steam fully escape (float valve will drop). (This will take 2 to 4 minutes.) Remove lid from cooker.
  • Remove the chicken to a plate or bowl, and shred with 2 forks. Return shredded chicken to cooker. Add cream cheese and cilantro, stirring until cream cheese melts and mixture is combined. Garnish with sour cream, tortilla strips, lime wedges, or shredded Monterey Jack cheese.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your chili.
  • Don't be afraid to experiment with different spices and seasonings: There are many different ways to make white chicken chili, so don't be afraid to try different combinations of spices and seasonings until you find one that you like.
  • Don't overcook the chicken: Overcooked chicken will be tough and dry. Cook it until it is just cooked through, then remove it from the pot and shred it.
  • Use a good quality broth: The broth is the base of your chili, so it's important to use a good quality broth. If you don't have any homemade broth, you can use a low-sodium store-bought broth.
  • Let the chili simmer for a while: This will allow the flavors to meld and develop. The longer you simmer the chili, the better it will taste.
  • Serve the chili with your favorite toppings: Some popular toppings for white chicken chili include sour cream, shredded cheese, diced avocado, and chopped cilantro.

Conclusion:

White chicken chili is a delicious, comforting, and versatile dish that is perfect for a quick and easy meal. It can be made with a variety of ingredients, so you can easily customize it to your own taste. Whether you like it mild or spicy, chunky or smooth, there is a white chicken chili recipe out there for everyone.
