2 pounds green peanuts
1/2 cup kosher salt
1/3 cup apple cider vinegar

Steps:

  • Rinse the peanuts in cool water. Place them in the Instant Pot or electric pressure cooker.
  • Add the salt and vinegar. Add enough water to just cover the peanuts. For me, that was about 10 cups. Be cautious to not exceed the max fill line on your appliance.
  • Place the lid on and seal. Cook on high pressure for 60 minutes than turn the appliance off and allow the pressure to release naturally. Carefully remove the lid and enjoy!

1 lb raw peanuts in the shell (not roasted)
1/3 cup coarse sea salt (if you like your peanuts saltier, you can increase to 1/2 cup)

Steps:

  • Sort through the peanuts, removing any debris. Rinse peanuts well and place into the Instant Pot.
  • Add salt to the insert pot.
  • Add enough water to cover the peanuts and stir. Keep in mind that they will float, so you will need to place a weight on top of them to keep them submerged. I simply place the trivet that came with the Instant Pot on top of the peanuts, then place a small Pyrex bowl (if you don't have Pyrex, any heatproof bowl/mug should work) on top of the trivet to keep it weighted down. Be sure to not overfill the Instant Pot--refer to your particular model's guidelines on maximum fill.
  • Lock the lid in place and close the vent. Using the manual setting, cook on high pressure for 80 minutes.
  • When cooking is complete, turn the pressure cooker off of the Keep Warm setting and allow the pressure to completely release naturally.

While trying to come up with something, I looked over and saw a bag of salt and vinegar potato chips and thought... why not? Making boiled peanuts in the Instant Pot® is as easy as 1-2-3. Pour them in and walk away. No more babysitting the pot of boiling water on the stove.

2 cups distilled white vinegar
2 cups water
⅓ cup sea salt
1 pound raw Virginia peanuts in shells

Steps:

  • Whisk vinegar, water, and salt in a large bowl. Add peanuts and stir to coat. Transfer mixture to a gallon-sized plastic zip-top bag and let sit for 8 hours or overnight.
  • Pour bag of peanuts and liquid into a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 120 minutes. Allow 10 to 15 minutes for pressure to build.
