How to Cook Pasta in the Instant Pot image

Use these easy step-by-step instructions to cook perfectly al dente pasta.This recipe was tested in the 6-quart Instant Pot. (When this method was tested in an 8-quart Instant Pot the results were not consistent.)

8 oz Pasta, any type or shape
2 cups Water
1/2 tsp Salt

Steps:

  • First, determine the cook time for the pasta you are using. See the notes below to determine the right time.
  • Combine pasta, water, and salt in the bowl of an Instant Pot. Give everything a stir. (See note below if cooking long, straight pasta like spaghetti, fettuccini, or linguini.)
  • Close and lock the lid.
  • Set the vent to "Sealing".
  • Pressure cook on high for the time determined in Step #1.
  • Leave the pasta on natural release for exactly 5 minutes. (Note: Be very careful not to let it sit for any longer or the pasta will overcook.)
  • Use manual release to release any remaining pressure.
  • Open the lid and give the pasta a good stir, 20 to 30 times. (This will get rid of any dry spots that remained where the pasta was sticking out of the water during cooking. If adding sauce, stir it in at this point.)
  • Return the lid to the top of the pressure cooker (no need to lock it just set it on top) and leave the pasta for 5-10 minutes more. (Note: This step is the most important because the pasta will continue to absorb any remaining liquid and continue to cook just a bit in the residual heat of the machine. This is the key to pasta that is cooked, but not overcooked.)
  • Serve!

3-4 cups garlic or chicken broth (e.g. 3-4 teaspoons Garlic Better Than Bouillon + 3-4 cups water - see Jeffrey's Tips)
1 pound (whole box) fettuccine
8 tablespoons (1 stick) salted butter, divided in half
1 1/2 - 2 cups heavy cream (preferred) or half & half (see yellow "Jeffrey Sez" section)
1 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon black pepper
5.2 ounce package Boursin herb cheese (any flavor) or 4 ounces of a brick of cream cheese

Steps:

  • Add the broth to the Instant Pot. In batches, break the fettuccine in half so it fits in the pot and layer in a criss-cross fashion between batches. (NOTE: Sorry, nonnas! I'm aware that breaking pasta in half is an Italian sin, but I assure you the noodles will still feel plenty long. Besides, this also ensures even cooking and creates more portions!). DO NOT STIR the noodles, but rather just press down on them until they're mostly submerged in the broth (it's okay if some of the noodles stick above the broth). Top with half the stick of butter.
  • Secure the lid, move the vale to the sealing position, and hit Manual or Pressure Cook at high pressure for 7 minutes. Quick release when done.
  • When the lid comes off, give everything a stir (NOTE: If any noodles seem slightly fused together, keep stirring and lightly separating with the spatula.The noodles should separate easily.)
  • Add the remaining half stick of butter and stir everything in the pot with a wooden spatula until the butter's melted.
  • Lastly, add in the cream, Parmesan, garlic powder, pepper and Boursin. Stir until totally melded, about 1 minute and let rest for 5 minutes to fully come together.
  • Serve immediately and top with freshly cracked black pepper, if desired. Goes great with garlic bread!

1 ½ pounds broccoli
2 tablespoons olive oil
¼ cup butter
6 cloves garlic, minced
1 teaspoon red pepper flakes
3 cups chicken stock
salt to taste
1 pound angel hair pasta
½ cup freshly shredded Parmigiano-Reggiano cheese, plus a little more for garnish
1 pinch red pepper flakes for garnish, or to taste

Steps:

  • Hold a sharp knife at a 45-degree angle and cut the florets from the broccoli stems into a bowl. Chop remaining stems into small pieces and transfer stems to a separate bowl.
  • Heat 2 tablespoons olive oil with butter in a skillet over medium heat and cook garlic in the hot oil-butter mixture, stirring often, until garlic is soft but not browned. Sprinkle in 1 teaspoon red pepper flakes and salt. Pour chicken stock into skillet and bring to a simmer. Stir broccoli stems into the stock mixture and simmer until tender, 10 to 12 minutes. Add a little water or stock if mixture starts to dry out.
  • Stir broccoli florets into skillet and cook broccoli sauce until florets are bright green and slightly tender, 3 to 4 minutes.
  • Bring a large pot of salted water to a boil and stir in angel hair pasta. Cook, stirring occasionally, until pasta strands are almost tender, about 4 minutes. Drain and transfer to a large pot.
  • Pour broccoli sauce over pasta, stir with a wooden spoon, and mix in 1/2 cup Parmigiano-Reggiano cheese. Cover pot with a lid and let stand until pasta absorbs excess liquid and finishes cooking, about 2 minutes.
  • Serve in bowls and sprinkle each serving with a dusting of Parmigiano-Reggiano cheese and a pinch of red pepper flakes.
