1 shallot, sliced
3 garlic cloves, minced
1 inch fresh ginger, peeled and sliced
1 red chili pepper, seeded and sliced
3 tablespoons raw peanuts
1 teaspoon shrimp paste
1/2 teaspoon salt
5 cups low-fat chicken broth
1/2 cup salted peanuts, coarsely chopped
2 tablespoons brown sugar
1 chayote, peeled, seeded, and sliced thin
1/2 cup frozen green beans, ends trimmed

Steps:

  • Prepare tamarind by placing it in a small bowl with warm water. Let soak for 15 minutes.

Tips:

  • Use fresh vegetables. Fresh vegetables will give your soup the best flavor and texture. If you can, buy organic vegetables to avoid pesticides and other chemicals.
  • Don't be afraid to experiment with different vegetables. This recipe is a great starting point, but you can add or substitute any vegetables that you like. Some good options include carrots, celery, potatoes, green beans, and bok choy.
  • Use a good quality curry paste. The curry paste is what gives this soup its flavor, so it's important to use a good quality paste. Look for a paste that is made with fresh ingredients and doesn't contain any added sugar or preservatives.
