2 tablespoons butter, melted
1 egg
2 tablespoons honey
¾ teaspoon salt
2 tablespoons butter, cubed
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Place sweet potatoes in a saucepan, cover with water, and bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes. Drain and mash.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.

1 tablespoon raisins
1/2 teaspoon grated orange zest
1/8 teaspoon salt

Dash ground nutmeg
2 tablespoons sweetened shredded coconut

Steps:

  • Place the sweet potato in a saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 30-40 minutes or just until tender. Drain; cool slightly and peel. Place in a bowl; mash. Stir in 1 tablespoon butter, raisins, orange zest, salt, cinnamon and nutmeg. , Transfer to a greased 1-1/2-cup baking dish. Toss coconut with remaining butter; sprinkle over the top. 3 lbs medium sweet potatoes
2/3 cup firmly packed light brown sugar, plus 2 tbl packed brown sugar
3 tablespoons butter, softened
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup milk

Steps:

  • In large saucepan cook sweet potatoes in boiling salted water to cover. Simmer until tender, about 15 minutes; drain. Peel sweet potatoes and mash.
  • Stir in 2/3 cups brown sugar, butter, cinnamon, nutmeg and salt; mix well. Blend in milk.

2 1/2 pounds sweet potatoes (about 4 medium large), peeled and cut into 1-inch pieces
1/4 cup plus 1 tablespoon half-and-half

1 ounce cream cheese
1 1/3 cups mini marshmallows
