2 tablespoons grated orange zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously butter and flour the 9 inch springform cake pan, tapping out any excess flour. Set aside.

1 cup all-purpose flour, plus more for dusting
1/4 cup granulated sugar
Pinch kosher salt
Zest of 1 lemon
1 large egg yolk
Nonstick cooking spray, for the ring molds
1 1/2 sticks (12 tablespoons) unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
4 large eggs
1 bunch small red grapes, stems removed
2 tablespoons turbinado sugar
1 1/2 cups vin santo
Juice of 1/2 lemon
1/4 cup heavy cream
3 tablespoons unsalted butter
1 cup mascarpone
2 tablespoons vin cotto, in a squeeze bottle
Fresh thyme leaves, for garnish
Powdered sugar, for dusting

Steps:

  • For the dough: To the bowl of a food processor, add the butter, flour, granulated sugar, salt and lemon zest. Pulse until it resembles coarse sand. Add the egg yolk and a tablespoon of water.
