1/2 pound beef top round steak, cut into thin strips
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 medium green pepper, julienned
1/4 cup chopped onion
1 garlic clove, minced
1 teaspoon beef bouillon granules
3/4 cup hot water
1 can (10 ounces) diced tomatoes and green chilies
2 tablespoons cornstarch
1/4 cup cold water
Hot cooked noodles, optional

Steps:

  • Sprinkle beef with salt and pepper. In a large skillet, cook beef in oil until no longer pink; remove and keep warm. In the same skillet, saute green pepper and onion until tender. 1 beef top round roast (3 pounds)
1 cup water, divided
1/2 cup reduced-sodium soy sauce
4 garlic cloves, minced
1 large onion, halved and sliced
1 large green pepper, cut into 1/2-inch strips
1 large sweet red pepper, cut into 1/2-inch strips
1/3 cup cornstarch
2 teaspoons sugar
2 teaspoons ground ginger
8 cups hot cooked brown rice

Steps:

  • In a 6-qt. electric pressure cooker, combine roast, 1/2 cup water, soy sauce and garlic. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 1 hour. When finished cooking, quick-release pressure. Add onion and peppers. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 2 minutes. When finished cooking, quick-release pressure. Press cancel. Remove beef to a cutting board., Select saute setting and adjust for high heat; bring liquid to a boil. In a small bowl, mix cornstarch, sugar, ginger and remaining water until smooth; gradually stir into vegetable mixture. Cook and stir until sauce is thickened, 1-2 minutes., Cut beef into slices. Stir gently into sauce; heat through. Serve with rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. 1 1/2 lbs round steaks
1/3 cup soy sauce
1 clove garlic, minced
1 teaspoon paprika
1/2 teaspoon ground ginger
1/4 cup oil
1 1/2 cups green peppers or 1 1/2 cups yellow peppers, sliced
1 cup celery, finely sliced
1 cup green onion, sliced
1 tablespoon cornstarch
3/4 cup water
1 cup diced tomato
salt, to taste
pepper, to taste

Steps:

  • Cut beef across grain into thin strips.
  • In a bowl combine soy sauce, garlic, paprika, ginger, and oil.
  • Add the beef to bowl and stir to coat.
  • Cover bowl and let it stand 30 min at room temperature.
