filtered water as needed
½ cup water
2 tablespoons lime juice
1 teaspoon apple cider vinegar
½ teaspoon garlic salt
¼ teaspoon ground red chile pepper
¼ teaspoon ground paprika
¼ cup water

Steps:

  • Place cashews in a bowl and pour enough filtered water on top to cover cashews completely. Soak for 2 hours to overnight.
  • Drain and rinse cashews and place into the bowl of a food processor. Add 1/2 cup water, lime juice, vinegar, garlic salt, chile pepper, and paprika. Blend for 1 minute. Add 1/4 cup water if necessary, for desired consistency. Blend until smooth, 3 to 4 minutes. Taste and adjust for flavor.

Vegetable oil, for shallow frying
1 cup raw cashews
1 teaspoon kosher salt
2 teaspoons light brown sugar
2 scallions, thinly sliced
2 teaspoons Roasted Chile Powder
2 teaspoons grated lime zest

Steps:

  • Fill a small saucepan with 1 inch oil and set over medium heat. Line a plate with paper towels and set it near the stove.
  • When the oil is shimmering-hot, carefully add the cashews and fry, stirring constantly, until light golden brown, 1 to 2 minutes. Keep in mind: The cashews will continue to cook after being removed from the oil and become a darker shade of brown, so it's best to remove them when they are still a little pale. Use a slotted spoon to transfer the cashews to the paper towels to drain.

2 teaspoons sea salt or 2 teaspoons pickling salt
2 teaspoons curry powder
1/2 teaspoon ground cumin
1/4 cup water
1 tablespoon butter, melted

  • On parchment paper-lined or greased rimmed baking sheet, toast cashews in 350°F (180°C) oven until fragrant and golden, about 10 minutes.

1/2 cup raw unsalted cashews, toasted
2 cups unbleached all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon finely grated lime zest plus 1 tablespoon fresh lime juice
1 3/4 teaspoons ground cardamom
1/8 teaspoon cayenne pepper
1/2 cup (1 stick) unsalted butter, softened
1/2 cup packed light-brown sugar
1 large egg
Indian colored spice blend such as red mukhwas (or colored sprinkles and nonpareils), for garnish
1/2 cup confectioners' sugar
1/4 teaspoon finely grated lime zest plus 2 tablespoons fresh lime juice (from 2 to 3 limes)

Steps:
