1 large onion, minced
1 1/2 teaspoons kosher salt, plus more to taste

1 small cinnamon stick
1 (28-ounce) can whole peeled plum tomatoes

Steps:

  • Melt butter in a large heavy-bottomed pot or Dutch oven over medium heat. Stir in onion and 1/2 teaspoon salt; cook until golden and browned around the edges, stirring occasionally, about 20 minutes. (Don't be tempted to turn the heat up to medium-high; keeping the heat on medium ensures even browning without burning the butter.)
  • Stir in garlic and ginger, and cook another 1 minute. Stir in cumin, paprika, garam masala and cinnamon stick, and cook another 30 seconds.
  • Add tomatoes with their juices. Using a large spoon or flat spatula, break up and smash the tomatoes in the pot (or you can use a pair of kitchen shears to cut the tomatoes while they are still in the can). Stir in coconut milk and the remaining 1 teaspoon salt. Bring to a simmer, and continue to cook for 10 minutes, stirring occasionally, and continuing to mash up the tomatoes if necessary to help them break down.
  • Stir in chickpeas and a pinch of cayenne if you like. Bring the pot back up to a simmer and cook, stirring occasionally, for another 10 minutes. Taste and add more salt if necessary.
  • Serve spooned over white rice, and topped with cilantro.

¾ cup water
½ cup couscous

Steps:

  • Place drained spinach in a saucepan over medium heat and add 1/2 cup water. Bring to a boil, about 5 minutes. Cover and cook about 5 minutes more. Set aside without draining.

Steps:

  • Heat large skillet and swirl in the oil. Add the chopped onion, garlic, and ginger. Saute until soft and lightly golden, 5 to 6 minutes.
  • In a small bowl, combine the cinnamon, garam masala, cumin, coriander, cloves, cayenne, and salt. Add to the onion mixture; cook and stir in the spices to lightly toast, 1 to 2 minutes. Stir in the tomato paste and cook for another few minutes to combine. The color should be dark red.
  • Add the chickpeas plus the cup of reserved liquid. Stir to combine. Cover and cook over medium heat for 10 minutes, removing the cover in the last few minutes. Remove from the heat and let sit for a minute to allow the beans to soak up the spice flavors. Season with salt to taste.

4 bone-in, skin-on chicken legs with thighs

1 (15.5-ounce) can garbanzo beans, rinsed, and drained

  • Preheat oven to 450 degrees. Line a baking sheet with parchment paper. Fit baking sheet with a wire rack; spray rack with nonstick cooking spray and set aside.

1 jalapeno pepper, seeded and minced
1 (14 1/2 ounce) can tomatoes, diced and drained
1 tablespoon cumin
1 tablespoon coriander
1/2 teaspoon turmeric
1/4 teaspoon cardamom
1/4 teaspoon clove, ground
1 teaspoon salt
2 (15 ounce) cans chickpeas, rinsed and drained
1 lb cauliflower floret (1 medium head, cored and trimmed)
1/4 cup cilantro, chopped

Steps:

  • Combine lemon juice and grated ginger in a small cup and set aside.
  • Heat a large saucepan over medium-high heat and add oil. Saute onion and cook until onion begins to brown (approx. 4 minutes). Add jalapeno and continue cooking until onion is brown all over (4-5 minutes). Add tomatoes, cumin, coriander, tumeric, cardamon, cloves and salt. Stir and cook one minute. 1 tablespoon finely grated fresh ginger
1 - 1 ½ serrano chiles , ribs, seeds, and flesh minced
1 tablespoon tomato paste
½ medium head cauliflower , trimmed, cored, and cut into 1-inch florets (about 4 cups)
1 (14.5-ounce) can diced tomatoes , pulsed in food processor until nearly smooth with 1/4-inch pieces visible
1 ¼ cups water
1(15 ounce) can chickpeas , drained and rinsed

  • Toast curry powder and garam masala in small skillet over medium-high heat, stirring constantly, until spices darken slightly and become fragrant, about 1 minute. Remove spices from skillet and set aside. Heat 3 tablespoons oil in large Dutch oven over medium-high heat until shimmering. Add onions and potatoes and cook, stirring occasionally, until onions are caramelized and potatoes are golden brown on edges, about 10 minutes. (Reduce heat to medium if onions darken too quickly.) Reduce heat to medium. Clear center of pan and add remaining tablespoon oil, garlic, ginger, chile, and tomato paste; cook, stirring constantly, until fragrant, about 30 seconds. Add toasted spices and cook, stirring constantly, about 1 minute longer. Add cauliflower and cook, stirring constantly, until spices coat florets, about 2 minutes longer. Add tomatoes, water, chickpeas, and 1 teaspoon salt; increase heat to medium-high and bring mixture to boil, scraping bottom of pan with wooden spoon to loosen browned bits.   • The next morning, drain out the water completely and wash the channa in a bowl of fresh and clean water.
  • Now, put the washed channa in a large pot.
  • Add water{should be 2-3 inches over the level of the chickpeas}.
  • Boil the chickpeas on high heat.
  • Heat oil in a pot.
  • Add asafoetida, fenugreek, corriander, turmeric and red chilli powders with salt to taste.

  • Prepare tamarind water by dissolving a lemon-sized piece of tamarind in 1/2 cup of HOT water.
  • Squeeze the tamarind ball really hard to let its juices flow into the water.
  • Pass this through a strainer and into a bowl.
  • Your tamarind water is ready.
  • In a bowl, dissolve the gramflour in 3 tbsps.
  • of water.
  • Mix this really well ensuring that no lumps remain.
  • Add this mixture and the tamarind water to the pot containing all the spice powders{masalas}.
  • Stir well and bring to a boil.
  • Lower flame, add the boiled chickpeas, dry mango powder and 2 1/2- 3 cups of water.
  • Boil for 10-15 minutes on medium flame.
  • Remove from flame.
  • Serve hot over a bowl of white long-grain Basmati rice.

1 (16 ounce) can chickpeas
2 tablespoons canola oil
2 medium yellow onions, finely chopped
2 large tomatoes, peeled and finely chopped
1 tablespoon coriander
1 tablespoon cumin
1 teaspoon fenugreek seeds
1 teaspoon cinnamon
1 -2 spicy green chili, seeded and finely sliced
2 tablespoons fresh ginger, grated
1 lemon, juice of
1 tablespoon fresh cilantro, chopped

Steps:

  • Heat oil, keep about 2 tbsp of the onion aside and fry the rest over medium heat for about 4-5 minutes, until tinged brown.
  • Add the tomatoes, cook for another 5 minutes, until soft. Stir frequently, mashing the tomatoes to a pulp.
  • Stir in coriander, cumin, fenugreek, and cinnamon. Add the chickpeas (including can liquid). Add salt to taste.
  • Cover and simmer for 15-20 minutes, stirring occasionally. Add some water if the mixture becomes too dry.
  • Meanwhile mix together the chillies, ginger, lemon juice, cilantro, and remaining onion.
  • Just before serving, and the ginger and onion mixture. Mix well.

1 Tbsp fresh ginger, finely grated
3 Tbsp lemon juice, freshly squeezed
2 Tbsp vegetable oil (or ghee)
2 c onion, diced
1 can(s) diced tomatoes, drained (14 1/2 oz)
1 Tbsp ground cumin
1 jalapeno, seeded and minced
1 Tbsp ground coriander
1/2 tsp turmeric
1/4 tsp ground cardamom
1/4 tsp ground clove
1 tsp salt
2 can(s) chickpeas, rinsed and drained (15 oz each)
1 lb cauliflower florets (1 medium head, cored and trimmed)
1/4 c fresh cilantro, chopped
3/4 c water

Steps:

  • 1. Combine lemon juice and grated ginger in a small cup and set aside.
  • 2. Heat a large saucepan over medium high heat and add oil (or ghee). Saute onion and cook until onion begins to brown (approx. 4 minutes). Add jalapeno and continue cooking until onion is brown all over (4-5 minutes longer). Add tomatoes, cumin, coriander, turmeric, cardamom, clove, and salt. Stir and cook 1 minute.
  • 3. Add drained chickpeas and 1/2 cup water to pot. Cover and cook over medium heat for approximately 10 minutes, stirring occasionally and adding additional water if mixture becomes too dry.
  • 4. In a separate pan, combine cauliflower and 1/4 cup water. Cover and cook over medium high heat, stirring carefully every minute or so until cauliflower is tender (approx. 7 minutes). Uncover cauliflower and boil off any excess liquid. Remove from heat and stir in lemon juice mixture. Combine cauliflower with chickpea mixture and add chopped cilantro.
  • 5. If desired, serve over rice or serve as is with Naan bread on the side.

1 tablespoon lemon juice
2 tablespoons olive oil
1 teaspoon brown sugar
1 1/2 teaspoons ground cumin

1 teaspoon garam masala
1 pinch ground black pepper
1 pinch cayenne pepper, or to taste
1/2 teaspoon salt, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Stir together the chickpeas, lemon juice, olive oil, brown sugar, cumin, coriander, cinnamon, garam masala, black pepper, cayenne pepper, and salt in a mixing bowl. Spread the chickpea mixture in a single layer on the prepared baking sheet. Roast in the preheated oven until the chickpeas are dark brown in spots, crisp, and have shrunk quite a bit, 25 to 30 minutes, stirring halfway through the cooking time. Cool to room temperature before serving.

¼ cup vegetable oil
1 onion, chopped
3 cloves garlic, minced
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 tablespoon minced fresh ginger root
3 (15 ounce) cans chickpeas, rinsed and drained
1 ¼ cups brewed black tea
1 tablespoon lemon juice
1 ½ teaspoons salt
1 ½ teaspoons ground cumin
1 ½ teaspoons garam masala
1 teaspoon ground coriander
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat. Saute onion and garlic in hot oil until onion is translucent, 5 to 7 minutes.
  • Stir tomatoes with green chile peppers into the onion mixture; cook until the tomatoes darken in color, about 8 minutes; add ginger and cook until ginger is fragrant, about 2 minutes more.
  • Stir chickpeas, black tea, lemon juice, salt, cumin, garam masala, and coriander into the tomato mixture; bring to a simmer, reduce heat to medium-low, loosely cover the skillet, and cook at a simmer, stirring occasionally, until the tea has nearly evaporated completely, 15 to 20 minutes.
