Time 1h30m

Yield 4 servings

Number Of Ingredients 8

1 cup cooked long grain or basmati rice
1 cup whole milk
1/2 cup heavy cream
3/4 cup coconut milk
2 ounces sugar, approximately 1/4 cup
1/4 teaspoon ground cardamom
1 1/2 ounces golden raisins, approximately 1/3 cup
1 1/2 ounces chopped unsalted pistachios, approximately 1/3 cup

Steps:

  • In a large nonstick saute pan over medium heat, combine the cooked rice and milk. Heat until the mixture begins to boil. Decrease the heat to low and cook at a simmer until the mixture begins to thicken, stirring frequently, approximately 5 minutes.
  • Increase the heat to medium, add the heavy cream, coconut milk, sugar, and cardamom and continue to cook until the mixture just begins to thicken again, approximately 5 to 10 minutes. Use a whisk to help prevent the cardamom from clumping. Once the mixture just begins to thicken, remove from the heat and stir in the raisins and pistachios. Transfer the mixture to individual serving dishes or a glass bowl and place plastic wrap directly on the surface of the pudding. Serve chilled or at room temperature.

Tips:

  • Use high-quality rice: Long-grain rice, such as basmati or jasmine, is best for this dish as it cooks evenly and doesn't get mushy.
  • Rinse the rice: Rinsing the rice before cooking removes the starch and helps to prevent it from sticking together.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from burning.
  • Don't stir the rice: Once the rice is cooking, don't stir it. Stirring the rice will break up the grains and make them mushy.
  • Let the rice rest: After the rice is cooked, let it rest for a few minutes before serving. This will help the rice to absorb the flavors of the other ingredients.
  • Use fresh vegetables: Fresh vegetables will give the pulao the best flavor. If you don't have fresh vegetables on hand, you can use frozen vegetables, but be sure to thaw them before using.

Conclusion:

Indian baked rice is a delicious and versatile dish that can be served as a main course or a side dish. It's a great way to use up leftover rice, and it's also a healthy and affordable meal. With a few simple tips, you can make perfect baked rice every time. This fragrant Indian-style baked rice will be a hit at your next get-together. Serve it as a side dish to your favorite Indian dishes, or enjoy it as a main course.
