1 lb frozen spinach
1 large egg
1/4 tsp kosher salt
1/2 cup cottage cheese
1/2 tsp ground nutmeg
1/2 cup shredded low-fat sharp cheese

1 large garlic clove, grated

  • Preheat oven to 375 degrees. Grease a 9-inch oval baking dish or equivilant with non-stick cooking spray.
  • Defrost spinach in the microwave or under warm water. Use your hands to squeeze out all the excess moisture in the spinach. Add to a medium mixing bowl.

3 tablespoons unsalted butter
2 cloves garlic, minced
1 small onion, finely chopped
1 1/4 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne
Two 10-ounce packages frozen chopped spinach, thawed and squeezed dry
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
2 ounces cream cheese
2 tablespoons panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. 4 extra-large eggs
3/4 cup heavy cream
