- In a small bowl, mix all the herbs and spices. Rub the chicken on all sides with the seasoning mixture
- Heat the oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes, on each side, or until golden brown. Set aside on a plate.
- Meanwhile, in a small bowl whisk the flour and almond milk until well combined. Set aside.
- Add 1 tablespoon of olive oil to the preheated pan. Add the onion and saute for 3-4 minutes. Add the garlic and continue to cook for no more than 1 minute. Pour the chicken broth and scrape the bottom of the pan to deglaze. Add the almond milk mixture and whisk to combine.
- Reduce the heat and allow the sauce to simmer for about 3-5 minutes, or until it thickens. Stir in the baby spinach and cook for 2 minutes, just until wilted. Stir in the parmesan cheese and allow the sauce to simmer until the cheese is melted.
- Return the chicken to the pan and continue to cook into the sauce until fully cooked through, around 8-10 minutes more.

- 1. Cook pasta according to package directions. Meanwhile, in a Dutch oven over medium heat, cook and stir chicken and onion in oil for 5 minutes or until chicken is no longer pink. ( if using a rotisserie chicken, skip the browning part ) just saute the garlic and onions.
- 2. Stir in soup and cream. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes.

- Preheat oven to 350 degrees.
- In a large pot, fill with water and cook manicotti tubes per package directions. Drain, rinse and set aside.
- Swirl olive oil a few turns in a skillet over medium heat. Add chicken. Sprinkle with garlic salt and Italian seasoning. Cook, stirring often, until done - 7-8 minutes. Transfer to a bowl and set aside.
- Add 2 tablespoons butter and another swirl of olive oil to the skillet over medium heat. Add mushrooms and cook 5-6 minutes. Add garlic and onion and continue to cook, stirring often, for another 5-6 minutes.
- Add spinach and cook until wilted, 3-4 minutes. Season to taste with salt and pepper.
- Remove from heat and add chicken, cream cheese and sour cream. Stir until incorporated and set aside.
- In another skillet, add 3 tbsp butter and melt over medium-high heat. When melted, add flour and whisk constantly, 2-3 minutes, until lightly browned.
- Whisk in milk and continue cooking, whisking constantly, until thick, about 3-4 minutes. Whisk in half of mozzarella, half of Monterey jack and 2 tbsp Parmesan, and whisk until incorporated and thick. The sauce should thickly coat the back of a spoon. Remove from heat.
- Place some of the sauce on the bottom of the baking dish. Using a spoon, fill the manicotti tubes with the spinach/chicken mixture and place in the baking dish. Continue until all tubes are filled.
- Pour the remaining sauce over the top of the pasta. Cover with foil and bake for 30-45 minutes. Remove foil, top with remaining cheeses and return to oven for 15 minutes.

- 1. heat oil in pan (I prefer cast iron) sprinkle all sides of chicken (I coat quite heavily), fry chicken in hot oil approimately 4-5 minutes per side until cooked through. remove from pan and allow to cool. when cool slice diagonally or into whatever size pieces you want. set aside
- 2. in a large pan over medium heat, melt butter, saute green onions (I save about a 1/4 cup out for garnish), red pepper, spinach, and sundried tomatoes until just turning tender.
- 3. reduce heat add milk, cream,chicken soup,salt, basil, black and white pepper, garlic powder, blackened seasoning, adobe sauce and chicken. heat through and stir in parmesan to cheese to thicken. - 1. In a saucepan, over medium-high heat, combine butter and flour to make a roux. When the roux comes together as a ball, add chicken broth and onions, stirring constantly. Add remaining sauce ingredients and heat it all together, stirring constantly. Remove from heat and set aside.

- Cook pasta as directed on box. Drain & cool. Steam fresh spinach and squeeze out all the juices. Set aside
- In a fry pan saute chicken pieces, onion and garlic in olive oil until chicken is done showing no pink; cool slightly. - 1. Heat a skillet with a little olive oil over medium heat and add diced onion. Cook 4-5 minutes or until just getting soft. Add garlic, stir and cook about 1 minute. Add spinach and cook until wilted. Remove from heat and let cool.
- 2. Tear two pieces of wax paper and place them on the counter. Make them wide enough to hold two patties each. Add spices to the ground chicken and mix well.
- 3. When the spinach mixture is cool enough to handle, add it to the chicken and mix until incorporated. It's sticky! Divide into four portions.
- 4. Place one portion of the chicken mixture on the wax paper and form into a patty, pressing to about 3/4 inch thick. Repeat with each of the other portions.
- 5. Reheat your skillet and add 2 tablespoons olive oil. Place one patty into the skillet by turning over the wax paper and gently placing the patty. Don't hold it too high over the skillet or it will splatter. Repeat with the second, third and fourth patties. Cook in batches if necessary. Cook 4 minutes each side. Dress buns per preference (mayo, pesto, avacado, tomato, red onion), top each with a chicken patty and serve.
