Veggie guests coming for dinner? Put this pie in the middle of the table and watch them dive in

Provided by Good Food team

Categories     Dinner, Main course

Time 50m

Number Of Ingredients 10

50g butter
2 tsp mustard powder
600ml milk
200g mature cheddar, grated
2 large potatoes, sliced into rounds
1 head of broccoli, cut into little florets
200g frozen peas
small bunch of chives, snipped
50g flour
1 head of cauliflower, cut into little florets

Steps:

  • Melt the butter in a saucepan, then stir in the flour and mustard powder and cook for 1 min. Gradually stir in the milk until smooth with no lumps, then keep stirring until the mixture begins to bubble and thickens to a creamy sauce. Remove from the heat, then stir in all but a handful of the grated cheese.
  • Heat oven to 220C/200C fan/gas 7 and bring a large pan of water to the boil. Cook the potato slices for 5 mins, tip in the broccoli and cauliflower for another 3 mins, then finally add the peas for 1 more min. Drain all the veg and pat dry. Reserve enough potato slices to cover the top of the finished dish, then gently stir the rest of the vegetables into the sauce with the chives.
  • Tip into a deep ovenproof dish, arrange over the reserved potato slices, then sprinkle with remaining cheddar. Bake for 20-25 mins until the topping is golden and crisp, then serve straight from the dish.

REDUCED-FAT IMPOSSIBLY EASY VEGETABLE PIE

Reduced-Fat Impossibly Easy Vegetable Pie image

I took Bisquick's Impossibly Easy Vegetable Pie and bulked it up with extra veggies and lowered the fat by substituting fat-free milk and cheese and self-rising flour for the Bisquick. It is a completely delicious and low-cal vegetarian dish that would work for a savory breakfast, a brunch, lunch and I've even served it for dinner. You can substitute cauliflower for the broccoli or try half of each. I just love the broccoli too much to try anything else!

Tips:

  • Prep your veggies: Before you start cooking, wash and chop all of your vegetables. This will save you time and make the cooking process go much smoother.
  • Use a good quality olive oil: Olive oil is a healthy and flavorful fat that will help to enhance the taste of your pie. Don't skimp on the quality of your olive oil, as it can make a big difference in the final product.
  • Don't overcook your vegetables: Overcooked vegetables will be mushy and bland. Cook them just until they are tender, but still have a bit of a bite to them.
  • Use a deep-dish pie plate: A deep-dish pie plate will help to prevent the filling from overflowing. It will also help to evenly distribute the heat, resulting in a perfectly cooked pie.
  • Let your pie cool before serving: Once your pie is out of the oven, let it cool for at least 15 minutes before serving. This will help the filling to set and will make it easier to slice.

Conclusion:

This veggie pie is a delicious and easy way to get your daily dose of vegetables. It's perfect for a weeknight meal or a potluck. With its simple ingredients and straightforward instructions, this recipe is sure to become a family favorite. So next time you're looking for a healthy and satisfying meal, give this veggie pie a try. You won't be disappointed!
