2 cups self-rising flour, plus more for dusting
1 cup full-fat Greek yogurt
Pizza sauce and shredded mozzarella, for topping

Steps:

  • Put a pizza stone or inverted baking sheet on the center rack of the oven and preheat to 450 degrees F.
  • Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. (The dough may appear dry and crumbly at first, but it will come together as you mix it.) Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable.
  • Divide the dough in half, roll into two balls, and then use a rolling pin to roll the balls out into two 10-inch pizza crusts. Dust the back of another inverted baking sheet or pizza peel with more flour, semolina or coarse cornmeal and place a circle of dough on top.
  • Top the dough round with sauce and shredded cheese as desired, leaving a half-inch bare border around the edge. Slide the pizza onto the preheated stone or baking sheet in the oven. (Alternatively, roll out the dough on a baking sheet, top as desired and put the sheet in the oven to bake.) Cook until the crust is golden and the cheese is bubbling, 8 to 10 minutes. Using a large spatula, transfer the pizza to a cutting board and let sit 5 minutes. Repeat with the remaining dough round.

This pizza dough is one I have adapted from a recipe found in "Not Just Cheesecake". I love yogurt cheese, and strain non-fat yogurt to always have on hand, and adding it to this dough makes a light, airy pizza crust that is easy to put together, and tastes great. Preparation time does not include straining the yogurt. For good solid cheese to form you need to strain at least overnight.

2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt (optional)
1/2 teaspoon baking soda
2 large egg whites
1 cup non-fat yogurt cheese
6 tablespoons margarine, melted and cooled

Steps:

  • This makes 2 10'' pizzas - I have successfully cut the recipe in half to make just one 10" crust.
  • Preheat oven to 450 degrees.
  • Sift flour, baking powder, salt and baking soda together.
  • In the bowl of a food processor, add egg whites, yogurt cheese and margarine, and pulse until well blended.
  • Add dry ingredients to yogurt cheese mixture and pulse until the dough comes together in a ball.
  • Turn the dough out on to a floured surface (it is very sticky - so flour your hands before you begin kneading), and knead for 30 seconds (I just count each kneading motion to 30).
  • Divide dough into 2 equal parts.
  • Place on an ungreased baking sheet and pat into your choice of shape (I usually spray my hands with non-stick cooking spray to help form the shape). Form a "lip" to hold in your toppings.
  • Top with your choice of pizza toppings
  • Bake between 15 to 20 minutes.
