ICEBERG WEDGE WITH CHUNKY BLUE CHEESE DRESSING

Iceberg Wedge with Chunky Blue Cheese Dressing image

Once looked down upon as so 1950s, the iceberg wedge with tangy blue cheese dressing has made a comeback, and with good reason. I'm always amazed at the enthusiastic response when I set out these salads-either on a party buffet table, or for a sit-down dinner. Guys especially love it.

Yield serves 8

Number Of Ingredients 14

2 cups mayonnaise
1 1/2 cups sour cream
1 tablespoon grated white onion
1 teaspoon minced garlic (about 1 medium clove)
1/2 teaspoon celery salt
1 tablespoon freshly squeezed lemon juice (about 1/2 medium lemon)
1 teaspoon Worcestershire sauce
1/4 cup dry white wine
1/4 cup thinly sliced green onions, white and green parts
2 cups good-quality blue cheese, crumbled (about 8 ounces)
1/4 cup finely chopped Mexican or French tarragon leaves (optional)
2 heads iceberg lettuce, cored and quartered
1 pint cherry tomatoes, halved
8 slices crisp cooked bacon, crumbled

Steps:

  • In a large bowl, whisk together all the dressing ingredients until combined. When ready to serve, set each lettuce wedge on a plate, spoon on about 1/2 cup dressing, and top with a handful of cherry tomato halves and a sprinkling of crumbled bacon.
  • The dressing and the bacon crumbles can be made up to 2 days in advance and refrigerated. Assemble the salad shortly before serving.
  • Mexican tarragon (also called mint marigold) is easily grown throughout Texas and is similar in taste to French tarragon, which literally can't take the Texas heat. If you don't find Mexican tarragon in the grocery store, look for the flowering plants at your local nursery. Little pots of these herbs also make charming party favors.
  • If you are so inclined, cut the calorie and fat load by using low-fat or nonfat mayonnaise and low-fat or nonfat sour cream instead of the full-fat stuff.

ICEBERG WEDGES WITH CREAMY BLUE CHEESE DRESSING

Iceberg Wedges With Creamy Blue Cheese Dressing image

This is a simple and fantastic retro-diner salad that is based on a recipe from the January 2003 issue of Bon Appetit magazine. Another rare recipe that my picky DH actually likes! I often serve this to compliment one of his BBQ's, and sometimes add tomato wedges, especially if I have some that are garden fresh.

Time 10m

Yield 8 serving(s)

Number Of Ingredients 8

1 cup mayonnaise
4 ounces blue cheese, crumbled (about 3/4 cup)
1/2 cup plain nonfat yogurt
1/4 cup buttermilk
3 tablespoons white wine vinegar
fresh ground black pepper
2 heads iceberg lettuce, each cut into quarters
2 green onions, chopped

Steps:

  • In medium bowl, whisk together mayo, 1/2 cup of the blue cheese, yogurt, buttermilk, and vinegar until nearly smooth.
  • Mix in remaining blue cheese.
  • Season with black pepper.
  • (Dressing can be made 1 week ahead and stored in refrigerator).
  • Arrange lettuce wedges on 8 plates.
  • Spoon dressing over wedges.
  • Sprinkle with green onions and season with additional black pepper.

Tips:

  • Choose the right iceberg lettuce: Look for heads that are firm and heavy, with tightly packed leaves. Avoid heads that are wilted, bruised, or have brown spots.
  • Cut the lettuce wedges evenly: This will help them cook evenly. Cut each wedge into 4-6 pieces.
  • Don't overcook the lettuce wedges: They should be tender but still have a bit of crunch. Cook them for 3-4 minutes per side, or until they are heated through.
  • Use a good quality blue cheese dressing: This is the key to making this dish delicious. Look for a dressing that is creamy and flavorful, with a good balance of tang and sweetness.
  • Serve the lettuce wedges immediately: They are best when they are hot and crispy.

Conclusion:

Iceberg lettuce wedges with blue cheese dressing is a classic dish that is perfect for any occasion. It is easy to make and always a crowd-pleaser. The combination of crispy lettuce, creamy dressing, and salty blue cheese is irresistible. So next time you are looking for a quick and easy side dish, give this recipe a try.
