- In a small bowl, combine ½ cup (85 G) chocolate chips and the heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total. Cover with plastic wrap and refrigerate until set, about 20 minutes.
- In a large bowl, combine the remaining chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total.
- Wrap a 9x5-inch (22x12 cm) loaf pan in foil, keeping the foil taut across the top. Set nearby.
- Spoon about 2 tablespoons of the melted chocolate-coconut oil mixture into a cone, flip upside-down, and spin to coat the inside, letting excess chocolate drip back into the bowl. Poke the cone through the foil to prop upright, and repeat with the remaining cones. Chill in fridge until set, about 2 minutes.
- Once set, spoon some of the softened ice cream into the cones to fill, and smooth the tops. Place the cones in the freezer for 10 minutes, or until set.

- Fold aluminum foil in half and bunch it up to form a solid cone shape with a pointy end and a wider end about the size of an ice cream cone. This will be used to shape the cones when they come out of the oven.
- Whisk egg whites and sugar together in a mixing bowl until mixture is smooth and shiny, about 2 minutes. Add flour, milk, melted butter, water, vanilla, and salt. Whisk together until thoroughly combined.
- Ladle about 1 to 2 tablespoons batter on 1 side of silicone mat on prepared baking sheet. Gently swirl the batter with the back of the ladle outwards to create a fairly thin flat circle 5 or 6 inches in diameter. If necessary, you can use a pastry brush to even the thickness. If batter seems too thin, add a bit more flour. If too thick, more water. Bake in batches, 2 per batch.
- Bake in preheated oven until edges are browned around the outside few inches, about 8 minutes.
- Gently loosen one of the circles. While still hot, place the aluminum foil cone mold on one end and roll the circle into a cone shape, pressing together the pointed bottom to seal it. Place on a cooking rack seam side down. You may need to put the pan back in the oven for a minute to heat the second circle; they need to be hot to wrap around the mold. - Melt the butter and allow to cool.
- Beat egg whites until soft peaks appear. Add 1 tablespoon confectioners' sugar and the salt, and whip until stiff. With a wooden spoon, gently fold in remaining sugar and the vanilla. Gradually fold in flour and cooled butter until incorporated.
- Heat the iron and rub with a lightly oiled piece of paper towel, then place 1 1/2 tablespoons of batter on it and close the cover. When steam subsides, check to see if wafer is golden brown. Remove it gently with a thin spatula; then, moving quickly, roll the wafer around a paper cone. It will cool and harden almost immediately. Store in an airtight container.

- You will also need 24 cellophane party favor bags and a roll of 5/8 sheer ribbon (optional).
- Melt chocolate.
- Dip top and upper sides of the ice cream cone into the the chocolate.
- I find it easier to melt the chocolate and using a pastry brush, brush sides with chocolate.
- Dip and roll top and upper sides into the sprinkles.
- Set aside on wax paper and let cool.
- Once cooled, fill cone with candies and then stick sucker or pixie sticks inside.
- Place into cellophane party favor bags and tie.
- Tie ribbon around for an extra festive touch.
- In the above picture I used 3 pixie sticks, 3 dum dum suckers, some have 1 mini pack of: Smarties, twizzlers or chocolate covered raisins in each cone favor.
- Serve and watch the kids eyes light up.

- Bake in the middle of the oven until golden and lightly brown around the edges, about 6 to 8 minutes. To shape, gently loosen a cookie from the baking sheet with an offset spatula, then turn it over so the smooth side is facing up. Return mixture to saucepan; stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 4 minutes; do not boil. Strain custard into another bowl. Add white chocolate; whisk until melted and smooth. Chill until cold.
- Toss berries, mangoes and remaining 7 tablespoons sugar in bowl; let stand 10 minutes. Puree mixture in blender. Mix puree into cold custard. Transfer custard to manufacturer's instructions. Transfer to container; freeze overnight.
- Spoon small amount of ice cream into 1 cone, packing gently. Dip large ice cream scoop into hot water. Scoop large ball of ice cream onto cone, pressing gently. Stand cone in small glass; place in freezer. Repeat with remaining cones and ice cream. Freeze 2 hours.
- For dipping and decorating:
- Place white chocolate and 1/2 cup oil in medium metal bowl. Set bowl over saucepan of simmering water; stir until chocolate is melted and smooth. Remove bowl from over water; cool until barely lukewarm, about 5 minutes.
- Working quickly and tilting bowl, dip ice cream end of cone into chocolate, turning to coat. Shake cone, allowing excess chocolate to drip into bowl.
- To decorate with sprinkles or chocolate shavings, immediately sprinkle dipped cone with topping of choice. Stand cone in small glass; freeze. Repeat with remaining cones.
- To decorate with tinted white chocolate dots, freeze dipped cones. Cut out three 10-inch parchment squares. Fold 1 parchment square diagonally in half, forming triangle. Twist corners of long side of triangle toward each other and roll to form tight cone. Seal outside seam with tape to secure. Repeat with remaining parchment squares.
- Rewarm remaining white chocolate in bowl over simmering water, stirring occasionally. Place 1/4 cup melted white chocolate in each of 3 small bowls. Mix 3 drops red coloring into first bowl, 3 drops green coloring into second bowl and 2 drops each of red and yellow coloring into third bowl; stir to blend. Spoon each tinted chocolate into separate parchment cone; fold wide ends over to seal. Cut off tip to form 1/4-inch-wide opening. Pipe tinted dots all over white chocolate-coated cone. Stand cone in small glass; freeze.
- To decorate with bittersweet chocolate, freeze dipped cones. Form parchment cone as described above. Combine bittersweet chocolate and remaining 2 teaspoons vegetable oil in small metal bowl. Set bowl over sauce pan of simmering water, stir until chocolate is melted and smooth. Remove from over water, cool slightly. Spoon some of chocolate mixture into parchment cone and fold wide end to seal. Cut off tip of parchment cone to form 1/8-inch-wide opening. Tilt bowl slightly and dip 1 side of white chocolate-coated cone into melted dark chocolate, allowing excess to drip back into bowl. Pipe chocolate across top of cone in zigzag lines.
