Time 45m

Yield 6

Number Of Ingredients 10

1 ¼ cups finely ground cornmeal

1 teaspoon white sugar
¼ cup milk, or as needed
1 quart vegetable oil for frying

  • Scoop about 1 heaping tablespoon of batter per fritter and gently drop into the hot oil; deep-fry in small batches of 3 or 4 fritters until golden brown, 3 to 4 minutes. Drain fritters on paper towels.

Tips:

  • Use fresh clams. Fresh clams will give your clam cakes the best flavor. If you can't find fresh clams, you can use frozen clams, but be sure to thaw them completely before using.
  • Chop the clams finely. This will help them to distribute evenly throughout the clam cakes.
  • Use a light hand when mixing the batter. Overmixing will make the clam cakes tough.
  • Fry the clam cakes in hot oil. This will help them to brown evenly and develop a crispy crust.
  • Serve the clam cakes hot with your favorite dipping sauce. Tartar sauce, cocktail sauce, or malt vinegar are all good choices.

Conclusion:

Clam cakes are a delicious and easy-to-make seafood appetizer or main course. They are perfect for a summer cookout or a casual get-together. With a few simple ingredients and a little bit of time, you can make clam cakes that will impress your friends and family. So next time you're looking for a new seafood recipe to try, give clam cakes a try. You won't be disappointed!
