1 large egg, beaten
1/2 cup buttermilk or 1/2 cup sour milk
1/4 cup green onion, finely chopped
1 tablespoon water
3/4 cup cornmeal
1/4 cup flour
2 tablespoons brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon ground red pepper
vegetable oil, for deep frying or vegetable shortening

Steps:

  • In a small mixing bowl stir the egg, buttermilk, green onions and water together.
  • In a medium bowl combine the cornmeal, flour, sugar, baking powder, baking soda, salt and pepper.
  • Add the egg mixture to dry ingredients, stirring until just moistened.
  • In a heavy saucepan or deep fryer, heat abut 2 inches of oil or shortening to 375 degrees.
  • Drop batter by tablespoons into hot fat.
  • Fry a few at a time, for 2 minutes, turning once.
  • Drain on paper towels, keep warm in a 325 degree oven until they are all fried.

1 tbsp sugar
1 egg
1 cup buttermilk
2 tbsp grated onion (or to taste)
fresh parsley (for garnishing)

Steps:

  • First, start by heating up enough oil in a pot to submerge the hush puppies. The oil temperature should reach 365 degrees F before you can start frying.
  • In a bowl, combine the flour, corn meal, salt, granulated garlic, cajun seasoning, baking powder, baking soda and sugar. Whisk together to mix.
  • Add the egg to the corn meal mixture and pour in the buttermilk and oil. Whisk together to combine.
