1-1/2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1/4 cup minced fresh parsley
3/4 cup crushed cornflakes
2 tablespoons butter, melted

2 large baking potatoes
1 can (6 ounces) light water-packed tuna, drained and flaked
1 celery rib with leaves, finely chopped
1 green onion, chopped
1/3 cup creamy cucumber salad dressing
1/8 teaspoon each salt and pepper
1/4 cup shredded Colby-Monterey Jack cheese

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, turning once, 7-9 minutes. Cool slightly.
