I recieved this recipe from my mother 7/22/00. It's very easy and my family loves it. Being 6 small meat loaves it's great to serve with a salad and mashed potatoes and corn for a couple of guests at the dinner table.

1 1/2 lb ground chuck
1 c dry bread crumbs
2 Tbsp finely chopped onion
1/2 tsp salt
1/4 tsp pepper
1 can(s) (5oz.) evaporated milk
3/4 c barbecue sauce

Steps:

  • 1. Combine first 6 ingredients, stirring until mixture is thoroughly blended. Shape mixture into 6 loaves; place loaves on rack of greased broiler pan. Spoon barbecue sauce over loaves. Bake at 450 degrees for 25 minutes. Serve immediately.

3 tablespoons 2% milk
2 tablespoons quick-cooking oats
1 tablespoon chopped onion
1/8 teaspoon salt
1/2 pound lean ground beef
1/2 teaspoon cornstarch
1/2 cup Italian tomato sauce
1/4 cup cold water

Steps:

  • In a small bowl, combine the milk, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 2 loaves. , In a small nonstick skillet, brown loaves on all sides; drain. Combine the cornstarch, tomato sauce and water until smooth. Pour over meat loaves. Bring to a boil. Reduce heat to medium-low; cover and cook until meat is no longer pink, 15-20 minutes.

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree.
